This Crockpot Vegan Coconut Curry Chickpea Lentil Soup is the easiest soup to make and is full of flavor! Low calorie, too!
2 (15 ounce) cans chickpeas (garbanzo beans), drained and rinsed
1 cup dry lentils, picked over and rinsed
1 large sweet potato, cut into small cubes
1 (15 ounce) can lite coconut milk
2 tablespoons curry powder (I used mild curry)
1 teaspoon ground turmeric
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon pepper
6 cups vegetable broth
Put all ingredients in the slow cooker and mix well. Cook on high heat for 4 hours. (I have not tried it, but cooking it on low heat for 8 hours would most likely work also.) Taste and add more salt and pepper if you prefer. Enjoy!
