Ingredients for Chocolate-Covered Almonds
Bittersweet Chocolate Bars: Use the chocolate from your favorite brand–high quality chocolate will taste better and have a smoother texture. Baking bars are made to melt well. I prefer dark chocolate almonds, but you can use milk chocolate if that’s what you like.
Whole Almonds: I use whole dry roasted almonds for the flavor roasting lends. But, of course, raw almonds will do, too.
Flaked Sea Salt: A little seat salt goes a long way. It’ll enhance the flavor of the almonds and chocolate, making this treat even more irresistible.
And that’s about it! Three super simple ingredients are all you need to make some irresistible, chocolate-covered crunchy almonds.
How to Make Almonds Covered in Chocolate
- Break the chocolate bars into pieces. Place them into a bowl and melt the chocolate over a double broiler or in the microwave.
- Place the almonds into the bowl with the melted chocolate and stir until they are well coated.
- Next, transfer the almond chocolate mixture to a rimmed baking sheet that is lined with parchment paper. For clusters, you can dump all of the almonds on the tray at the same time. For individual chocolate covered almonds, use tongs or a fork to transfer them one at a time so they are separated on the tray.
- Sprinkle the almonds with flaked sea salt.
- Place the tray in the freezer to firm. If making clusters, break them into bite-sized pieces.
- Store in an airtight container at room temperature or in the refrigerator. Enjoy!
Tips and Variations
It is an easy recipe, so even beginners will have no trouble with it. Nonetheless, here are a few tips and possible variations to help you!
- Get high-quality ingredients! This is the secret to making the best chocolate-covered almonds.
- Melt chocolate in the double broiler. It won’t burn this way or seize easily. The microwave will work, but the double broiler is my preferred method.
- I use bittersweet baking bars for this and they give a smooth chocolate coating. If you use chocolate chips, add a little coconut oil to the melted chocolate.
- A little salt goes a long way. I don’t give a measurement, but a touch of sea salt is all you need.
- Pecans, hazelnuts, or other nuts could be used in place of the almonds. You can also try peanuts! They turn out to be addictive, too.
