Girl Scout Cookie season is a dangerous time. You see a cute little girl out there testing her entrepreneur and sales skills and how can we say no to that? Plus, those cookies are so darn good. Even if the ingredient list leaves a lot to be desired, we justify it because we are supporting the GIRL SCOUTS!

It’s hard to say no. Especially when your favorite Girl Scout cookie flavor is Samoas. You, too?  That crunch, that coconutty vibe with chocolate, and caramel–it’s totally my jam. Love these delicious Caramel Delites! (I still call them Samoas. Why did they change the name?!)

Since I’m all about enjoying sweet treats with a healthy twist, I decided to give this homemade Samoa version a shot! And guess what? These healthy Samoa cookies are downright addictive and could not be easier to whip up. The biggest problem was the first time I made them, they were gone in the same day! 

Take them to work and gatherings, or stock up your own cookie jar – these are truly delightful. Serve them with your favorite beverage or eat them as your after lunch or dinner sweet treat – you can’t go wrong either way.

No Special Equipment Needed: You don’t need a stand mixer or food processor. All you need are two bowls and a lined baking sheet!

Easy and Quick Recipe: Who’d say no to less than an hour of prep time to get the most delectable cookies ever? Let me guess – NO ONE! This recipe is as easy as it gets and doesn’t take too much of your time. Most of the time is actually for chilling, so totally hands off.

Extremely Similar to the Real Samoas Cookies:. This vegan and gluten-free version of Samoas Cookies is almost as good as the real thing. There’s shredded coconut, dark chocolate, caramel like flavor- classic! I omitted the shortbread crust layer and you won’t miss it a bit. This is SO much easier and it’s delicious without it.

No Refined or Artificial Sweeteners: We’re using maple syrup and coconut sugar as our sweetener. Both are all-natural and a healthier alternative to processed sugar because they retain some nutrients instead of having them stripped away with processing. They also add a great caramel flavor to the cookies.

Perfectly Shareable: A batch yields 18 cookies, so feel free to share them with your loved ones! You can even make multiple batches and gift them to friends and family.

No-Bake Cookie Recipe: Dodge that oven heat with this no-bake cookie recipe! It’s perfect for the hot summer months when you crave something sweet but don’t want to turn on the oven.

I love making cookies with healthy ingredients! Here’s what you need to make these no bake Samoa cookies.

Coconut Sugar: Make homemade caramel with this less processed sugar. It has an excellent flavor and also contains a small amount of inulin fiber, which helps regulate your blood sugar levels, making a huge spike less likely than with regular white sugar.

Coconut Oil: You can use refined or unrefined coconut oil here.

Maple Syrup: Maple syrup adds to the incredible flavor of these healthy Samoa cookies.

Unsweetened Almond Milk: Moisten your cookie base for a silky texture. Since we’re using only a bit, you can oat or coconut milk, too.

Salt: Know this – salt is a dessert recipe staple! Add just a tiny bit and watch the flavors balance out beautifully.

Natural Almond Butter: The mixture of almond butter with coconut oil and maple syrup and coconut sugar creates a caramel-like flavor and texture while keeping this recipe vegan.  Peanut butter or cashew butter can be subbed here, but the flavor profile will change. 

Vanilla Extract: Enhance the buttery notes of your copycat Girl Scout Samoa cookies by adding a bit of vanilla extract. It pairs with the caramelizing coconut sugar and maple syrup for a flavor boost.

Unsweetened Coconut: You want to use unsweetened coconut here. It should be free of sugars and other additives. Also, use finely shredded coconut instead of coconut flakes. It’s easier to shape and holds together well.

Old-Fashioned Rolled Oats: These will work as our binding agent for the recipe. And, of course, the chewy texture and the great mouthfeel are a bonus.

Stevia-Sweetened Dark Chocolate Chips: The original Samoa cookies are dipped in milk chocolate. But we’re tweaking this a bit for a healthier alternative. In my opinion, dark chocolate chips pair much better with coconut and caramel.

How to Make Healthy Samoa Cookies

  1. Line a baking sheet with parchment paper, wax paper, or a silicone baking mat.
  2. In a medium saucepan, whisk together the coconut sugar, maple syrup, coconut oil, salt, and almond butter to a simmer. Bring to a simmer and allow to simmer for one minute, whisking constantly.a mixture of oats and coconut in a pan
  3. Remove from the heat and add the vanilla, shredded coconut, and rolled oats and stir until well combined.
  4. Use a cookie scoop to drop the mixture onto the prepared cookie sheet. Use your finger or thumb to create a small hole in the middle and then slightly flatten the cookie. Repeat until you’ve used all the mixture.putting a hole in the middle of a cookie on a baking shee
  5. Place the tray in the freezer to allow the cookies to set, 20 minutes or so.
  6. Meanwhile, melt the chocolate chips using a double boiler or the microwave.
  7. Dip each cookie into the melted chocolate so the bottom half gets a coating of the chocolate. Place it, chocolate side down, back on the tray. Repeat with all the cookies.dipping cookies in chocolate
  8.  Use a spoon to drizzle the remaining melted chocolate on top of the cookies. Return the tray to the freezer to allow the chocolate to set, 10 minutes or so.
  9. Store these cookies in an airtight container in the refrigerator. Enjoy!

Vegan, gluten free, and no bake, these Healthy Samoa Cookies are a big improvement from the kind you get from a box!


Ingredients

  • 1/4 teaspoon salt
  • 1/2 cup natural almond butter
  • 1 teaspoon vanilla extract
  • 1 cup finely shredded unsweetened coconut
  • 1 cup old fashioned rolled oats
  • 1 cup stevia-sweetened dark chocolate chips

Instructions

    Hey I noticed the ingredients call for almond milk but then it’s not included in the steps. I made mine without because I wasn’t paying attention and they are fine but didn’t know if it made a huge difference and when to add it! Thank you!!
