I LOVE hummus. It’s one of my go-to snacks and there’s so many ways to enjoy it. You can serve it with some veggies and crackers for a protein-packed snack or spread it on a wrap for a tasty lunch!
Hummus is popular in the middle east. Traditional hummus is typically made from chickpeas, tahini, olive oil, and spices. Adding beets give this hummus a subtle sweetness and beautiful color. It also adds lots of nutrients! You’ve got to try it!
Recipe Ingredients: What You Need
This classic hummus recipe calls for short list of simple ingredients!
Beets
Not only do beets have a beautiful color, but they’re also filled with nutrition. They’re loaded with vitamins and minerals including vitamin c and vitamin b9. The beet flavor brings this hummus to the next level! It’s one of the star ingredients in this recipe!
Chickpeas
Also referred to as garbanzo beans, chickpeas are a great source of protein and fiber. They’re full of minerals including manganese and vitamin B.
Tahini
Nutty tahini gives hummus a creamy consistency and has lots of health benefits.
Olive Oil
In addition to the tahini, adding extra virgin olive oil results in the creamiest hummus. It’s full of antioxidants and has many anti-inflammatory properties.
Garlic
A teaspoon of minced garlic (about one garlic clove) adds so much flavor to this perfect dip!
Lemon
The lemon juice and zest gives this amazing hummus recipe a tangy, citrusy flavor that is perfect for this recipe.
Salt and Black Pepper
Just a little bit adds the perfect amount of flavor!
How to Cook Beets
Beets are one of my favorite root vegetables. This recipe calls for one cooked beet. You can purchased already-cooked beets in a vacuum pack container in the product section of most grocery stores, so if you’d like to save time you can purchase cooked beets.
If you’re cooking beets at home, here are two methods I recommend.
Roasting Beets
You can roast your beets in the oven to make roasted beet hummus. It’s really simple, it just takes some time.
- Heat your oven to 400 degrees f.
- Remove the leafy tops from the whole beetroot and scrub them well. You do not need to remove the beet skins.
- Wrap beets loosely in aluminum foil and place them on a baking sheet.
- Roast the beets 50-60 minutes, depending on how large they are. They are ready when you can easily pierce them with a fork.
- Allow the beets to cool and use your fingers to peel the skin away.
Cooking Beets in the Instant Pot
- Remove the leafy tops from the raw beet and scrub them well. You do not need to remove the beet skins.
- Add 1 cup of water to the inner pot of your Instant Pot.
- Place the beets in a steamer basket and place it on top of a trivet in the inner pot.
- Cook using high pressure for 20 minutes for small beets, 23 minutes for medium beets, and 27 minutes for large beets.
- Use the quick release method to release the pressure, and then open the top.
- Allow the beets to cool and use your fingers to peel the skin away.
How to Make Delicious Beetroot Hummus
This creamy beet hummus is super easy to make and requires little effort.
- Place all ingredients in the bowl of a food processor and process until smooth and creamy, about 2 minutes.
- Transfer the creamy hummus to a bowl and chill* before serving as it’s better served cold than at room temperature.
- Serve with vegetables or crackers. May also be used as a healthy spread for sandwiches.
- This red beet hummus tastes amazing if you drizzle it with some extra virgin olive oil, sesame seeds, and dried Zahtar seasoning blend.
