I’ve spent my entire mom life revamping recipes. Regular sweet treats are okay once in a while, but most of the time I turn to healthy cookies without all of the sugar. When I got a craving for a chocolate no bake cookie last year, I knew it was time to create a recipe for healthy no-bake chocolate cookies. This is the recipe I came up with and it did the trick.
These delicious cookies are a healtheir version of your regular cookies, use simple ingredients, and are super simple to put together. No baking required. What a relief, right?!
They’re also popular with the little ones. You can pack them as a school snack or offer them as after-school treats. Trust me, they’ll be gone in a blink!
I find this recipe a lifesaver because it gives me 48 yummy cookies in a batch. Game night? Bring it on!
Ingredient List for Healthy N0-Bake Cookies
I kept the essence of classic no bake cookies the same, but drastically reduced the sugar. Instead of a full 2 cups of refined sugar, I used 1/3 cup maple syrup to sweeten these, along with just 1/4 cup chocolate chips. The result is a cookie that is certainly less sweet than the original, but still sweet enough to satisfy your chocolate cravings in a healthy way.
I also made these dairy-free by using coconut oil instead of butter and reduced the oil by replacing half of it with apple sauce. The apple sauce cuts the fat and calories and adds more sweetness without more sugar. Classic no bakes are made with peanut butter. I’ve tried these with almond butter, peanut butter, and sunflower seed butter, and they all work great. If you use certified gluten-free oats, these are vegan and gluten-free cookies. A very allergy-friendly treat!
Nut or Seed Butter –
Use a cup of vegan butter of your choice. Almond butter, natural peanut butter, cashew butter, sunflower seed butter – literally, whatever you like. They’ll all do their job of holding your cookies together.
Cocoa Powder –
You’ll need 3 cups of unsweetened cocoa powder. Unsweetened so you can control how sweet your cookies turn out in the end.
Coconut Oil –
If you aren’t big on coconut flavor, get refined coconut oil. Don’t leave this ingredient out if you want soft cookies. Replace with ghee if you like. Even mashed bananas will do. (If you don’t mind banana flavor)
Applesauce –
Again, unsweetened (for the same reason). We are using this to make sure our cookies turn out super moist and also reducing the amount of oil needed.
Pure Maple Syrup –
Now, you can sweeten your cookies. Natural maple syrup is a perfect alternative to refined sugar. Since it has sufficient natural sugar content, you don’t need to stress about your cookies not being sweet.
Unsweetened Almond Milk –
Non dairy milk make these cookies dairy-free. If you don’t mind, use regular milk.
Oats –
Use 3 cups rolled oats. You can use quick oats if that’s what you like, but old-fashioned oats will give your cookies a nice texture and they’re less processed.
Chocolate Chips –
I mean, you can’t make healthy, no-bake chocolate cookies without chocolate chips. Use dark chocolate chips for a healthier option. Stevia-sweetened chocolate chips will reduce the sugar content even further.
Tips for Making the Perfect Batch
Although this no-bake cookie recipe is pretty straightforward, you want them to be the best ever, right? Here are tips for making this a successful recipe for anyone who tries it!
- Make sure your nut or seed butter is at room temperature before mixing it with other ingredients. It will ensure that everything blends together smoothly. Natural nut butters work best here!
- Use parchment paper and a cookie scoop to get evenly sized-cookies. If you’re serving it to the kids, make funny cookies using cookie cutters.
- If you want your cookies to harden, cook the mixture for the mentioned duration. Just don’t burn it, or you’ll have to restart.
- Make the recipe sugar-free by using stevia. However, only add a little at a time so you can adjust it according to your liking.
- Feel free to add a few drops of vanilla extract for that extra flavor.
- Sprinkle a little sea salt on top at the end. Unbeatable!

Description
These are a healthy version of classic no-bake cookies! They have much less sugar and are dairy-free.
Ingredients
- 1 cup nut or seed butter of choice
- 3 tablespoon cocoa powder, unsweetened
- 1/4 cup coconut oil (use refined if you don’t like coconut flavor)
- 1/4 cup applesauce, unsweetened

- 3 cup rolled oats (quick cooking or old fashioned both work)
Instructions
- In a medium sauce pan, mix together the first six ingredients (through almond milk).
- Bring the mixture to a gentle boil, stirring frequently.
- Continue the low boil for two minutes, stirring almost constantly.
- Reduce the heat and add the chocolate chips, stirring until they are melted.
- Remove the pan from the heat and stir in the oats.
- Drop by rounded tablespoon onto a tray lined with wax or parchment paper. (You may choose to form them into a cookie shape or leave them as-is.)
- Place the tray in the freezer to allow the cookies to firm, at least 15 minutes.
- These are best kept stored in the refrigerator.
