I don’t even know where to start with these energy balls. Energy bites, energy balls, whatever you want to call them. These healthy, bite-sized snacks TASTE LIKE CAKE. Sorry. I didn’t mean to yell at you. But I’m just a little bit excited about throwing a few simple, clean ingredients together and having them taste like cake.
I get excited about recipes like this because I’m so passionate about creating healthy recipes that taste good. I want the world to know that healthy, clean-eating recipes don’t have to taste like cardboard. You don’t have to turn to processed foods. Healthy eating doesn’t have to be complicated. Simple ingredients can come together to make flavorful foods that nourish your body.
I’m here to tell you, you can have your cake and eat it, too.
Strawberry Shortcake Energy Balls
- Total Time: 10 minutes
- Yield: 16 balls 1x
Description
These healthy, bite-sized snacks TASTE LIKE CAKE.
Ingredients
1 1/2 cups freeze dried strawberries (such as these)
1 cup soft pitted dates
3/4 cup cashews
3 tablespoons hemp seeds (optional)
1 tablespoon honey or agave nectar
1 1/2 teaspoons pure vanilla extract
Instructions
Put the freeze dried strawberries in a food processor or powerful blender and process until they turn into a powder. Add the dates, cashews, vanilla extract, and honey and process until the dates and cashews are well broken down. If the mixture sticks together when you press it in between your thumb and fingers, it’s ready. Roll the mixture into 1-inch balls. Alternatively, you can line a bread pan with parchment paper, press the mixture into the pan, and then cut it into bars. (Like I did with these Pumpkin Spice Energy Bars.) Enjoy!

Hi Priya! I’m glad you found me. 🙂 Unfortunately, I don’t think fresh strawberries will work here. I think the mixture would be too wet. I have used both raw and roasted cashews in this recipe, so either works.

Hi! Do you have any suggestions for what I can use as a substitute for the cashews? If it were a smaller amount I would just leave them out but 3/4 cup is a good sized amount! We have a nut allergy in the house but I would really like to try these! Thanks!
