This refreshing green salad is loaded with bright and crunchy veggies, has a bit of protein from the egg, and some soft goat cheese for the creaminess – perfect! I love it for the satisfying crunch I get in each bite. And, of course, the health factor makes me want to make this salad over and over.
The perfect way to serve it is with a grilled protein on the side, like chicken or fish. I’ve served it with a simple lemon and herb grilled chicken, and it was a hit. The flavors of the salad paired beautifully with the smoky charred chicken.

Ingredients
For the Salad
Fresh Asparagus Spears: Remove the woody ends and cut what’s left behind into two pieces. I blanch it so it gets a bit tender. Don’t overdo it, though; you don’t want to lose its beautiful bright green color.
Frozen Peas: Snap and snow peas will both work in this recipe. I’m using frozen (I let them thaw), but you can also go with fresh ones if that’s what you have.
Mixed Greens: Salad greens are the perfect base for this easy side salad. I go with butter lettuce, fresh baby spinach, and arugula. If you prefer a bit of bitterness in your salad, add kale or radicchio.
Soft Goat Cheese: This is the tangy, creamy bite you’re looking for! Plus, goat cheese boosts the calcium content of the salad, making it great for your bones and teeth.
Handful Broccoli Microgreens: These tiny greens have a slightly peppery and tangy taste that goes well with the other ingredients in the salad.
Hard Boiled Egg: Cut them in half or in wedges and add them to the top of your salad. Eggs are a great source of protein and will give you that extra energy boost.
For the Dressing
Lemon Juice: Freshly squeezed lemon juice adds a tangy kick to this dressing and balances out the creaminess from the goat cheese.
EVOO: Extra virgin olive oil is a must in most of my salad dressings. It helps to emulsify the dressing and adds a healthy dose of monounsaturated fats.
Basil Leaves: Add some fragrance to your salad with fresh herbs. I’ve been growing my basil indoors with my Click and Grow indoor garden. I love having fresh herbs on hand when I need them!
Salt and Pepper: To taste! I like my dressing on the tangier side, so I add less salt. Adjust according to your preference.

How to Make the Ultimate Spring Salad
- Bring a small pot of water with a steamer basket to a boil. Add the asparagus and peas to the basket, cover the pot, and steam for 10 minutes. Immediately place the basket into a bowl of ice water.
- Make the dressing: Place the dressing ingredients in a small blender and blend until combined.
- Build your salad: Fill your bowl or plate with greens, top with asparagus, peas, the egg, and goat cheese.
- Drizzle the dressing and enjoy!
Tips and Tricks
- Don’t boil your veggies to sadness. You want them to get soft but still be crisp!
- You can add more veggies to make the salad crunchier and more filling. Crisp lettuce, red onion, cherry tomatoes, green beans, and spring onions are good choices.

Once you add the salad dressing, its shelf life reduces. So, I only dress the amount of salad that I’m sure will get gobbled. But if you still have leftovers, transfer them into an airtight container, keep them in the fridge, and enjoy them the next day.

Ingredients
For the salad
- 6 asparagus spears, woody ends removed and cut into 1 to 2 inch pieces

- 1 ounce mixed greens
- Handful broccoli microgreens
- 1–2 hard boiled eggs, cut in half
- 1/4 cup crumbled goat cheese
- salt and pepper

- 5 large basil leaves
