How to make Strawberry Cheesecake ParfaitsÂ

- Make the strawberry compote: In a medium saucepan, combine chopped strawberries, 2 tbsp lemon juice, and 2 tbsp honey. Heat over medium, bring to a simmer, and cook about 10 minutes, stirring frequently. Mash larger pieces with a potato masher or the back of a spoon until saucy. Remove from heat and let cool.

- Blend the cheesecake layer: Put 1.5 cups cottage cheese in a blender and process until completely smooth.
- Add 1/2 cup plain Greek yogurt, 1/2 cup strawberry powder, 4 tbsp honey, and 1 tsp vanilla extract.

- Blend until fully combined and creamy. Set aside.
- Whip the cream: Place the heavy cream in a large bowl and whip it until stiff peaks form.

- Fold in the cottage cheese mixture until it is just combined.
