The beauty of this gluten-free strawberry pie is in its simplicity. You only need a few basic ingredients to come up with this showstopper of a dessert. Plus, the flavor combination of the strawberry filling is just as amazing as any traditional pastry shell. Yep, even without a crust!
This Crustless Cranberry Pie was such a hit when I made it around Thanksgiving time, I knew I had to make a berry version for spring and summer!
The best part about this dessert is how healthy it is compared to most classic desserts. You’re getting a ton of vitamin C, antioxidants, and magnesium, all in a bite of a fresh strawberry pie.
Serve it with a dollop of cream, ice cream, coconut whip, or yogurt. You can also top it off with some crushed walnuts or chocolate chips. Yummy every time.

All-Purpose Gluten-Free Flour

Swerve Sweetener
Swerve is the most sugar-like natural sweetener. It caramelizes perfectly and measures just like sugar. What I love most is that it has no bitter aftertaste. Use a cup of Swerve in your easy strawberry pie recipe.
Strawberries
These beautiful berries are the star of this show! Pick the plump, deep red ones that are firm to the touch. I prefer fresh berries over canned or frozen ones. They’re more flavorful and give a great texture. You can find them at your local farmer’s market. We’ll be using two cups of fresh strawberry pieces in this pie.
Butter
Butter does a few things for your fresh strawberry pie. It enhances the flavor, improves the texture, and disrupts bubble formation in the strawberry mixture. - Transfer your mixture into the pie pan/pie plate and smooth it out using a spatula or your hands.
- Let your yummy dessert bake for 30-35 minutes or until a toothpick inserted in the center comes out clean and the edges are starting to turn golden brown.
Tips and Tricks
- This recipe can be made with different flours if you don’t need it to be gluten-free. Use unbleached all purpose flour, whole wheat pastry flour, or a 50/50 mix of AP flour and whole wheat flour.
- If you prefer to not use erythritol, try a monk fruit sweetener or other natural sugar alternative. You can also use organic cane sugar for this recipe using the same ratio.
- If you would like this recipe to be dairy free, replace the butter with coconut oil. Use the same amount as the recipe calls for butter, 1/2 cup.
- A sprinkle of cinnamon or ground ginger will add a nice touch, too!

Can I Use Frozen Strawberries?
Sure! If your craving strikes in non-strawberry season, stick to the frozen ones. Just remember that you’ll need to thaw them and get rid of excess liquid first. You may also be able to lower the sweetener amount. Frozen berries are quite sweet already!
