Recipe Ingredients–What You Need
Banana: In order to keep the filling free of added sugar, we’ll use bananas to sweeten it up instead. They’ll act as our natural sweetener and make the Greek yogurt base even creamier.
Plain Greek Yogurt: Greek yogurt has twice as much protein as regular yogurt. So, naturally, I’m biased. Full-fat Greek yogurt will give you creamier bars. Vanilla yogurt is a great choice, too, but you’ll have added sugar if you don’t use plain yogurt. You can also use dairy-free yogurts if that’s what you prefer.
Natural Peanut Butter: A little PB flavor hurts no one! Plus, it adds some filling fats and flavor. If you’re following a Paleo diet, you can substitute it with almond butter. Need this to be nut-free? Sunflower seed butter will work, too!
Pure Vanilla Extract: Add a splash of vanilla extract to boost the flavor of this delicious Greek yogurt bark.
Strawberry Pieces: Fresh strawberries are one of the top high-antioxidant fruits. They have no fat or cholesterol, and they will add a great pop of color to your healthy frozen yogurt bark. Of course, the added sweetness is a bonus! This is giving banana split vibes, no?
Bittersweet Chocolate Bars: You can also use dark chocolate chips here. For the bars to be completely free of added sugar, use stevia-sweetened chocolate.
Popsicle Sticks: These are needed to turn them into bars that you don’t have to hold with your hands and get messy! If you need some, order them here.
How to Make Frozen Greek Yogurt Bars
- In a medium bowl, mash the banana well.
- Add the yogurt, peanut butter, and vanilla and whisk until smooth.
- Fold in the strawberry pieces.
- Drop the yogurt mixture into six even circles on a baking sheet lined with parchment paper.
- Use a rubber spatula to smooth and even out the circles. Add one popsicle stick per circle, making sure it’s in the middle of the yogurt and not sticking out either side.
- Place the tray in the freezer and freeze for 2 hours.
- Just before the time is up, melt your bittersweet chocolate using the microwave or a double broiler.
- Once the chocolate is melted, dip the frozen Greek yogurt bars in the chocolate until evenly coated and then place them back on the parchment-lined tray until the chocolate is firm.
- Store in an airtight container in the freezer.

Always layer your baking sheet: Use parchment or wax paper to layer your baking sheet so the popsicles come out clean without turning into a sticky mess.
Use a popsicle mold: I made these without a mold, but if you want to use a mold, go for it!
Cut your strawberries evenly: Slice your strawberries as uniformly as possible so that they’ll freeze at the same time and you won’t end up with mushy or overly firm pieces.
Add your favorite toppings before freezing: If you want to add any crunchy toppings such as nuts, coconut flakes, or brown rice crisps, do it before freezing the bars so everything comes out in one piece.
Variations to Try
