Healthy fats are so important to incorporate into our diets. I like to include coconut oil in Meghan’s diet as much as possible, especially now that she isn’t getting the medium-chain fatty acids from breastfeeding. Yes, the medium-chain fatty acids found in coconut milk are the same as in breast milk! Thus, today’s Strawberry Smoothie recipe was born.
This old photo is evidence of how far I’ve come on my journey to more natural and green living. I’ve since eliminated plastic cups and use reusable straws in place of plastic straws.
I may not have blogged about it, as I often create new smoothie recipes that I don’t think anyone will be too interested in, but she loved this. Tim just happened to get home as I was making her this smoothie for a snack. He tasted it and said, “I want one!” so I made him one, too. They both slurped them down quickly. I tasted it and felt like I should have been drinking it on a tropical beach somewhere. Delicious.
Strawberry Smoothie Recipe Ingredients
You can use dairy or non-dairy yogurt for this recipe. I recommend full-fat yogurt and Greek yogurt is great for extra protein.
I also recommend unrefined coconut oil for this recipe.
How to Make a Healthy Strawberry Smoothie
For best results, I recommend a powerful blender like the Vitamix. I’ve had the same blender for over almost a decade and it still works beautifully for super smooth and creamy smoothies. If you need a more budget-friendly option, then I recommend the Ninja blender. See my video blender review to see both of these in action!
Make sure to blend the smoothie for long enough so the coconut oil gets fully incorporated. You don’t want small chunks of coconut oil in your smoothie.

Description
A delicious way to get some fruit and healthy fat into your kids’ diet, this Strawberry Smoothie is delicious.
Ingredients
- 1/3 cup plain yogurt (dairy or nondairy)
- 1/3 cup coconut milk
- 5 large strawberries
- 1 tablespoon coconut oil
- 1 tablespoon raw honey
- a little ice
Instructions
- Blend all ingredients until smooth and creamy.
Notes
Recipe Notes:
- You can use frozen strawberries, especially helpful when strawberries aren’t in season. Eliminate the ice if you do so.
- You’ll need full-fat, canned coconut milk for this recipe, not the carton kind.
- Raw honey has the most health benefits, but regular honey will work as well. Honey should not be consumed by babies under 1 year of age.

This smoothie was delicious, but I did encounter one problem. My coconut oil when it hit the cold of the ice transformed into tiny gross oily nuggets throughout the smoothie. Does this happen with yours? Maybe it’s my brand of coconut oil? Anyhow, I’ve been making it without now (at least there’s some coconut oil in the milk), and we all love it.

Michelle, I don’t know how I missed this comment. Sorry for the late response! One time I had that problem with the coconut oil, but only once and I’ve made this several times. I am not sure if it was the brand of coconut oil, because I do use different brands all the time, or if it wasn’t blended enough. My guess is I just didn’t blend it enough that one time.

Do you use canned coconut milk or the actual milk substitute kind?

I use canned. This time it was Trader Joe’s LIte Coconut milk. I’d like to use the actual milk substitute as I hate to use canned goods (as most are lined with BPA) but I worry I wouldn’t use it up fast enough. I haven’t seen any in small containers.

Sounds yummy! Will definitely have to try. I actually use Coconut oil on my skin as a moisturizer as I don’t like using any chemicals on my skin either. Not only does Coconut oil leave your skin soft and silky, it smells delicious (and is edible!).

I have heard of using it on your skin, but it’s so expensive I’ve been hesitant to try it.
