I have a recipe for traditional no bake chocolate cookies made with cocoa powder, no bake trail mix cookies, and no bake sunflower freezer cookies…but these No Bake Almond Butter Cookies are a GAME CHANGER! They’re so tasty and easy to make. The chewy texture is the best part. I’m obsessed!
These cookies make a great healthier dessert or afternoon snack. The first time I made them, they were a huge hit! I hope you love them as much as we do!
Recipe Ingredients–What You Need
The recipe calls for basic ingredients you might already have on hand!
Almond Butter
The star ingredient in this no bake cookie recipe. You can use the store-bought kind or make your own. For my homemade almond butter recipe, click HERE. It’s full of healthy fats and antioxidants.
Coconut Oil
Coconut oil adds subtle flavor that’s perfect for this recipe. It also contains many antioxidant properties.
Maple Syrup
Pure maple syrup is a natural sweetener that’s gives this original recipe the perfect amount of sweetness. I like the flavor of maple syrup best in this recipe, but you could substitute a different liquid sweetener if you’d prefer.
Almond Milk
I use unsweetened almond milk because the maple syrup gives this delicious recipe enough sweetness.
Salt
Just a touch of salt enhances all the flavors in this no bake almond butter cookies recipe.
Vanilla Extract
A little bit of vanilla adds great flavor.
Coconut
I recommend using unsweetened coconut flakes. It brings these delicious cookies to the next level.
Rolled Oats
Oats have lots of nutrition. They’re full of fiber, antioxidants, and can even lower cholesterol levels!
How to make this Easy Almond Butter Cookie recipe:
- Line a baking sheet with wax or parchment paper. Set aside.
- In a medium saucepan, bring the coconut sugar, maple syrup, coconut oil, milk, and salt to a rapid boil. Boil for one minute.
- Turn off the heat and add your cup of almond butter, vanilla, shredded coconut, and rolled oats and stir until well combined.
- Use a regular sized cookie scoop to drop the cookie dough onto the wax paper (You can use a small cookie scoop for more snack size cookies). Allow to cool for about 15 minutes, and then transfer to the freezer to set completely, about another 30-45 minutes. An important thing to remember is to let them cool for the best results.

Can I use a different kind of oats?
You can substitute quick cooking oats, but I would not recommend using steel cut. I prefer using old fashioned rolled oats because they are less processed than quick cooking oats.
How should I store these cookies?
You can store these no bake cookies in an airtight container in the fridge.
How long will these cookies last?
These easy cookies will last for up to 2 weeks in the fridge.
Can I use a different nut butter?
Yes. For a peanut butter version of these no bake cookies, you can substitute equal parts of peanut butter for almond butter. If you have a nut allergy, you could try sunflower seed butter as well. Cashew butter would also be a delicious alternative!
Can I substitute the coconut sugar?
You can substitute granulated or brown sugar.
Can I add toppings?
If you’d like to add something to these cookies, cacao nibs, white chocolate chips, or a sprinkle of sea salt on top would be delicious. These are optional ingredients, but are a great way to bring these cookies to the next level.
Are these cookies healthy?
Healthy is a relative term, but these cookies are vegan, gluten-free, and made with wholesome ingredients. It’s also made with coconut sugar instead of refined sugar.

- 1/3 cup coconut sugar

- 1 cup finely shredded unsweetened coconut
- 1 cup old fashioned rolled oats
