Healthy cookies are totally my jam. I love creating recipes that allow me and my family to have a sweet treat that isn’t loaded with regular flour and refined sugar. There’s a time and place for that, (I’m looking at you Peppermint Chocolate Chip Cookies at Christmas time!) but for everyday sweets, I like to keep ’em on the healthier side.
Peanut butter lovers, you’re going to LOVE this one!
There are a few things I really love about this peanut butter cookie recipe:
- It has peanut butter (duh!) and a strong peanut butter flavor.
- It’s sweetened with honey rather than refined sugar.
- There are only simple ingredients that are readily available in your grocery store.
- Did I mention there’s only THREE ingredients in this recipe?!
- The cookies are gluten-free and dairy-free, so those will allergies or looking to avoid those more inflammatory ingredients can enjoy these!
- These are small cookies. Three biters. Just the right amount to satisfy my sweet tooth without overindulging.
You can serve these almond flour cookies with a glass of almond milk for an even more delicious treat.

Ingredients for Almond Flour Peanut Butter Cookies
Do short ingredient lists make you happy, too? These healthy cookies only call for three simple ingredients!
Almond Flour
Almond flour is nutty with a slight sweetness to it. It’s made by grinding blanched almonds, which means there’s a lot of protein and healthy fats in every bite. Plus, it’s loaded with Vitamin E, which is amazing for our skin, eyes, and immune system.
You can get almond flour from a store or make it yourself at home. This recipe requires 2 cups of fine almond flour. Almond meal is more coarse and won’t work as well here.
Natural Peanut Butter
Regular peanut butter is yummy, but if you’re looking for the healthiest option, natural (salted or unsalted) peanut butter is the best choice. There’s no added sugar or oil in it. Plus, it’s super-rich in flavor.
Natural peanut butter is a good store of minerals like magnesium, potassium, and zinc. All of these are essential nutrients for a healthy body.
I prefer smooth peanut butter, but crunchy peanut butter will also work here if you’d like to add some extra texture.
You’ll need 1/2 cup of natural peanut butter.
Honey
I opt for honey to sweeten these cookies instead of refined sugar. No artificial sugar in this recipe, of course. We’ll be sticking to half a cup of honey. It has natural healing properties and is an excellent source of antioxidants. Plus, it binds the ingredients pretty well. If you want to try a vegan version, go for maple syrup. It’s equally finger-licking delicious.
Additional Ingredients
I wanted to keep these a super simple 3-ingredient recipes, but if you want to add some flavor enhancers, you certainly can. I have a few more ingredients that you can add to the mix. These are optional, so even if you leave them out, you’ll still have a yummy batch of peanut butter cookies for your fam.
Vanilla Extract
A little goes a long way, so pour a teaspoon of it into the batter. You’ll love the scent. I do.
Cinnamon
Cinnamon adds more warmth and depth to these cookies. And the hint of spice is unbeatable. Again, a teaspoon, even half of it, would do.
Chocolate Chips or Chopped Nuts

A Pinch of Salt
A pinch of flaky sea salt gives these almond flour cookies the perfect sweetness-saltiness balance.

Instructions for Almond Flour Peanut Butter Cookies
No need for an electric mixer or fancy equipment to make these gluten-free peanut butter cookies. Just grab a bowl and lined baking sheet and you’re ready to go!
- Preheat your oven to 350 degrees. Next, line a baking sheet with parchment paper or a silicone baking mat and set it aside.
- Mix peanut butter and honey together in a medium bowl. Add the almond flour and mix until you get a smooth dough.
- Using the palm of your hands, roll the dough into balls and place them on the cookie sheet. Press down each using a fork. You can just do a single press on the top of each cookie or make a crisscross pattern.
- Bake in the preheated oven for 11-13 minutes, until the edges are starting to turn a golden brown color.
- Let your cookies cool on a cooling rack for 5-10 minutes. Dig in.
Frequently Asked Questions
Will Almond Meal Work Instead of Almond Flour?
Technically, it will. But almond meal has a gritty texture because of the almond skins. It also has a slightly bitter flavor. Almond flour, on the other hand, is smoother and sweeter. So, I recommend using almond flour for this recipe.
Can I Use Any Other Flour?
You can certainly try, but I haven’t tested the recipe with anything except almond flour. Whole wheat flour or all-purpose flour certainly could work here. Coconut flour is also a great gluten-free option. But remember, each type of flour has a different texture and absorbs liquid differently, so adjust the recipe accordingly.
Can I Double or Halve this Recipe?
Of course! This recipe yields 20 cookies, but you can make more or less depending on the crowd size. If you want to make fewer cookies, halve the recipe and bake as usual. For a double batch, just double the ingredients.
Can Coconut Sugar Replace Honey?
Because honey is a liquid sweetener, the cookies will be too dry without it. If you want a similar cookie that uses a granulated sugar, try these Keto Peanut Butter Cookies with Chocolate. Coconut sugar can be substituted for the Golden Monkfruit Sweetener that recipe calls for.
Can I Freeze the Cookie Dough?

This is an excellent recipe. I’m always looking for gf baking as my daughter eats gf and when she visits with the others I like to have special baking done for her as the others get plenty of non-gf baking treats. I doubled the recipe, only had 4 cups of almond flour so I used 1 cup of rice flour and I also added a cup of chocolate chips. Yummy and delicious! And doubling the recipe made exactly 40 cookies.
