This is one of those dinner recipes that looks difficult, but isn’t. It’s also one of those dinner recipes that makes everyone happy when you serve it. No groans or complaints when Mozzarella Stuffed Chicken hits the dinner table!
This recipe has a similar flavor profile to my Italian Baked Chicken recipe, but this recipe has the mozzarella cheese stuffed inside and it is cooked in a cozy marinara sauce. This totally gives it Chicken Parmesan vibes, but without the parmesan cheese breading. We can still call it a healthier chicken parm! It’s WAY easier to make, as well.

Recipe Ingredients–What You Need
You’re going to love the simple ingredients this recipe calls for. They come together perfectly to make a healthy and delicious dinner!
boneless skinless chicken breast
I like to use chicken breasts that are about the same size so they cook evenly. Skinless chicken breasts are a good source of lean protein and also selenium, phosphorus, and vitamin B6.
salt and pepper
Salt and pepper help season and flavor your chicken.
1 tablespoon Italian seasoning blend
This is a common spice blend that you can find at any grocery store. It has dried basil, oregano, thyme, garlic powder, onion powder, and salt. If you don’t have this on hand, you could use 1 teaspoon each of the dried herbs listed above.
1 1/4 cups shredded mozzarella cheese
I used the pre-shredded cheese here and it worked well. I’ve not tried this with fresh mozzarella, but imagine it would work just fine.
2 tablespoons avocado oil
Avocado oil is a healthy cooking oil that has a high smoke point and is not inflammatory. It also has a neutral flavor, so it won’t affect the taste of your dish. You can use olive oil if you prefer, but I don’t recommend using vegetable oil.
15 ounce jar marinara sauce
I used a jarred marinara sauce to keep this recipe easy, but you could certainly make your own. Try my Instant Pot Spaghetti Sauce! Any tomato sauce you love will work here!
Optional, for serving: parmesan cheese, fresh basil
How to Make Mozzarella Stuffed Chicken Breasts
Are you ready to see just how easy this recipe is to make?! With minimal prep time, it’s definitely an easy weeknight dinner that will go in your regular rotation.
Step 1
Using a sharp knife, slice each chicken breast in the middle horizontally, make a deep slit but don’t cut all the way through, to create a wide pocket.
Step 2
Generously season both sides of the chicken breast with salt and pepper. Then, add the Italian seasoning blend and use your fingers to press it into the breasts on both sides.
Step 3
Stuff 1/4 of the cheese inside each chicken breast’s pocket.
Step 4
Heat the oil in a large skillet over medium-high heat. Add the stuffed chicken breasts to the hot skillet. Sear for 4 minutes, or until golden brown, and then carefully flip each piece of chicken and cook for 3-4 minutes, until the second side is golden brown.
Step 5
Pour marinara sauce in the pan and reduce to medium heat. Cover and cook an additional 5-10 minutes, until the chicken is cooked through and the internal temperature reaches 165 degrees F. The time will vary depending on how thin or thick chicken breasts you use. Use a meat thermometer to ensure doneness.
Optional: Serve with parmesan cheese for sprinkling on top of chicken. You could also top with fresh basil chiffonaded.
