With simple ingredients, this Mozzarella Stuffed Chicken is ready in less than 30 minutes!

- 4 boneless, skinless chicken breasts
- salt and pepper
- 1 tablespoon Italian seasoning blend
- 1 1/4 cup shredded mozzarella cheese
- 1 (15 ounce) jar marinara sauce
Instructions
- Using a sharp knife, slice each chicken breast in the middle horizontally, make a deep slit but don’t cut all the way through, to create a wide pocket.
- Generously season both sides of the chicken breast with salt and pepper. Then, add the Italian seasoning blend and use your fingers to press it into the breasts on both sides.
- Stuff 1/4 of the cheese inside each chicken breast’s pocket.
- Heat the oil in a large skillet over medium-high heat. Add the stuffed chicken breasts to the hot skillet. Sear for 4 minutes, or until golden brown, and then carefully flip each piece of chicken and cook for 3-4 minutes, until the second side is golden brown.
- Pour marinara sauce in the pan and reduce to medium heat. Cover and cook an additional 5-10 minutes, until the chicken is cooked through and the internal temperature reaches 165 degrees F. The time will vary depending on how thin or thick chicken breasts you use. Use a meat thermometer to ensure doneness.
Notes
Optional: Serve with parmesan cheese for sprinkling on top of chicken. You could also top with fresh basil chiffonaded and sprinkled on top.
