This Mediterranean Quinoa Salad with Chicken is a great meal prep lunch you can make ahead of time!
A friend recently told me about a quinoa salad with chicken she ordered everyday from the resort restaurant while on vacation. She described it so well it made me wish I had it so I decided to try and make my own at home!
Mediterranean Quinoa Salad with Chicken is easy to make and it’s full of both nutrients and flavor. That’s the best meal combination!! I get so happy when healthy food tastes this delicious.
I really thought that this Quinoa Salad recipe was my favorite, but now I have this Mediterranean Quinoa Salad with Chicken and there might just be a new favorite in town.
It’s made with quinoa (duh!), cucumbers, tomatoes, feta cheese, olives, and chicken with a light citrus vinaigrette.
Want to hear something weird? I used to hate olives. Like really hate them. But I’ve started to like them in the last year or so. I’ve just sort of accidentally eaten them (or probably was just too lazy to pick them off of something) and realized I’m liking them more and more.
So it turns out that thing I always tell my kids about our taste buds always changing is true! It pays to be open to exploring new tastes and foods.
This quinoa salad with chicken makes a great meal prep lunch. I made this one day and ate it for lunch for the next 3 days. That’s a winner in my book!
