A friend recently told me about a quinoa salad with chicken she ordered everyday from the resort restaurant while on vacation. She described it so well it made me wish I had it so I decided to try and make my own at home!
Mediterranean Quinoa Salad with Chicken is easy to make and it’s full of both nutrients and flavor. That’s the best meal combination!! I get so happy when healthy food tastes this delicious.
I really thought that this Quinoa Salad recipe was my favorite, but now I have this Mediterranean Quinoa Salad with Chicken and there might just be a new favorite in town.
It’s made with quinoa (duh!), cucumbers, tomatoes, feta cheese, olives, and chicken with a light citrus vinaigrette. I do love my quinoa salads. Have you tried this Warm Quinoa Salad yet?!
Want to hear something weird? I used to hate olives. Like really hate them. But I’ve started to like them in the last year or so. I’ve just sort of accidentally eaten them (or probably was just too lazy to pick them off of something) and realized I’m liking them more and more.
So it turns out that thing I always tell my kids about our taste buds always changing is true! It pays to be open to exploring new tastes and foods.

Mediterranean Quinoa Salad with Chicken Recipe

Description
This is quinoa salad with chicken makes a great meal prep lunch. It’s made with a light citrus vinaigrette and is loaded with vegetables!
Ingredients
For the Vinaigrette
- 1/4 cup fresh orange juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
For the Salad
- 3 cups cooked quinoa
- 1 large English cucumber, diced
- 1 cup halved grape tomatoes
- 3/4 cup pitted, sliced olives
- 1 cup feta cheese
- 2 cups cooked shredded chicken
- salt and pepper
Instructions
- Whisk together the orange juice, olive oil, apple cider vinegar, and honey in a bowl. Set aside.
- In a large bowl, place all of the salad ingredients. Top with salt and pepper and gently mix together.
- Drizzle the dressing on top and gently toss to combine. Enjoy!
