Pumpkin spiced white hot chocolate

This warm drink combines two of my favorite flavors:  pumpkin spices and chocolate.  Really, you can’t go wrong here.  Even though fall doesn’t officially start until September 23rd, it was here the moment I took a drink of this spicy, comforting hot chocolate drink.

When I saw this picture of a pumpkin white hot chocolate on Pinterest, I knew I had to recreate it.  It is as good as it looks and sounds.  The spicy flavors of cinnamon, ginger, nutmeg, and cloves meld perfectly with creamy white chocolate.  The result is a rich, delectable drink that is fabulous on a chilly autumn evening.

Don’t forget when you are drinking it, the pumpkin is providing you with vitamin A, C, and E, as well as calcium, iron, potassium, copper, and manganese.  I’d say that totally makes up for the sugar from the white chocolate chips, wouldn’t you?

Description

A hot chocolate full of fall flavors


Ingredients

Scale
  • 1 1/4 cup milk (I use unsweetened almond milk)
  • 1/2 cup pumpkin puree
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • pinch of ground cloves
  • pinch of ground nutmeg
  • 1/8 teaspoon vanilla extract
  • 1/4 cup white chocolate chips

Instructions

  1. In a small saucepan, heat the milk, pumpkin puree, vanilla, and spices.  Bring to a gentle simmer and allow to simmer for a minute.  Remove from heat and add the white chocolate chips.  Stir until the chips are melted.  Serve immediately.

Looking for a caffeinated coffee pumpkin drink?  Averie at Loves Veggies and Yoga posted a recipe for a homemade version of Starbuck’s Pumpkin Spiced Lattes last week.   Check that one out if you want a coffee version.  For me, this white chocolate version is perfect way to satisfy my pumpkin spiced latte craving without giving Baby Bean the shakes from caffeine.  And with the addition of chocolate.  That’s always a good thing.    Enjoy!

    This looks amazing! I am definitely going to have to make up a batch for my family.

    Do you have any brand of white chocolate chips that you recommend? I usually make my own semi-sweet chocolate chips, so that I can sweeten them with honey instead of sugar. Are there any white chocolate chip brands out there that use a sweetener other than sugar?

      I don’t know of any, sorry. This is one of those indulgent recipes for me. I love that you make your own chocolate chips–that’s great! Is it easy to do?

        They are super easy to mix! All you do is mix equal parts melted coconut oil or unsalted butter with cocoa powder. Then sweeten to taste using either raw honey or maple syrup 🙂

        Last time I made them I only made a small batch to have for some banana bread so I did 6 Tbsp melted unsalted butter, 6 Tbsp cocoa powder, and about 1/2 Tbsp of raw honey (it could have been more or less though… I don’t usually measure the honey, I just add a little bit at a time until it’s as sweet as I need it to be).

        You combine everything in a small bowl and then pour it onto a shallow dish (I’ve used a pie pan coated with coconut oil, or even a silicone cake pan) and then cover and put in the fridge until it’s hard. Once it’s hardened you just break it into chunks.

        You could make them into actual chocolate chips if you want, but honestly, I’ve never tried it because it seems like more work to me. The chunks are usually fine for what I need them for.
