There is nothing mind blowing about this recipe. It’s a veggie sandwich. But it’s my favorite sandwich, I’ve eaten it for the last five days straight, and I want to share it with you.
I learned about this sandwich the summer between my sophomore and junior years in college. My grandmother died the previous summer and my parents acquired a number of her miscellaneous things, including her books. One of those books that caught my attention was Fit for Life (not to be confused with Body for Life, which I would discover a few years later).
I devoured the book in one afternoon and was intrigued by the concepts of food combining and when to eat certain foods. It turned out the much of the dietary information in the book was difficult to follow (Only fruit before noon? How is that supposed to fill me up?!), but something great did come from my reading the book: the recipe for my favorite sandwich.
At first glance this sandwich may seem like nothing out of the ordinary, but give it more than just a glance. The ingredients go together so harmoniously that they combine to create a perfect sandwich. Really. Perfect. Just try it once and you’ll see what I’m talking about.
How to Make the Best Veggie Sandwich in the World
Order is important here, folks. You can’t just put this sandwich together any which way. Pay attention.
First, you want to lightly toast your bread. Then, spread one slice with as much mayo (vegan or not) as you prefer.
Next, you want to add the lettuce.
Then, add the tomato slices. The lettuce must go before the tomatoes as it prevents the tomatoes from getting the bread soggy. Very important.
On top of the tomatoes, add your cucumbers.Now you want to add your avocado to the opposite slice of bread.
I like to mash the avocado to the bread a little so it sticks. Now put it together and slice it in half like a proper sandwich.

What you have created is magical. On each slice of toasted bread is creaminess from the avocado and Vegenaise (I hate a dry sandwich, don’t you?) with crunchy lettuce and cucumbers that envelop the juicy tomato. See? Perfection.
When I make this, I use the other half of the avocado for Meghan’s second favorite sandwich. I mash the avocado half, spread it on bread, and add some nutritional yeast.
She loves it.
And just for the added cuteness, here she is proud of her latest accomplishment, learning to draw happy faces. 🙂

I tried this sandwich today and it has changed my life. I’m a bonafide meat and potatoes lover and I never dreamed a veggie sandwich would be so good. I could have ate three of these in one setting. I absolutely loved it and will be making it again 🤤

I was too lazy to go look for my book so did a search for this sandwich. It is MY favorite sandwich of all time, too! I usually add a thin slice of red/purple onion but even without it, this sandwich is crazy good! So glad you posted it so i didn’t have to search for my book. 🙂

We discovered FFL on a trip to NZ 15 years ago. We embraced the concept so much that we encouraged both our parents to watch their combination eating. It stuck for my mother, who, after a month, regained an hourglass figure in her late 60s! During our 10 month trip, my husband, who is built like a rugby player, lost 4 inches all around his waist (that’s the only thing we measured). We eat this type of sandwich all the time. Although, I usually don’t stop at the cucumbers. I cut a few slices of red or green bell pepper, a few bits of onion for zest, and even throw in some shredded carrot and/or beet root. We call them our NZ sandwiches. I am so thrilled I stumbled across your site a few weeks ago. I am loving your blog and posts. Thank you!
