There is nothing mind blowing about this recipe. It’s a veggie sandwich. But it’s my favorite sandwich, I’ve eaten it for the last five days straight, and I want to share it with you.
I learned about this sandwich the summer between my sophomore and junior years in college. My grandmother died the previous summer and my parents acquired a number of her miscellaneous things, including her books. One of those books that caught my attention was Fit for Life (not to be confused with Body for Life, which I would discover a few years later).
I devoured the book in one afternoon and was intrigued by the concepts of food combining and when to eat certain foods. It turned out the much of the dietary information in the book was difficult to follow (Only fruit before noon? How is that supposed to fill me up?!), but something great did come from my reading the book: the recipe for my favorite sandwich.
At first glance this sandwich may seem like nothing out of the ordinary, but give it more than just a glance. The ingredients go together so harmoniously that they combine to create a perfect sandwich. Really. Perfect. Just try it once and you’ll see what I’m talking about.
How to Make the Best Veggie Sandwich in the World
Order is important here, folks. You can’t just put this sandwich together any which way. Pay attention.
First, you want to lightly toast your bread. Then, spread one slice with as much mayo (vegan or not) as you prefer.
Next, you want to add the lettuce.
Then, add the tomato slices. The lettuce must go before the tomatoes as it prevents the tomatoes from getting the bread soggy. Very important.
On top of the tomatoes, add your cucumbers.Now you want to add your avocado to the opposite slice of bread.
I like to mash the avocado to the bread a little so it sticks. Now put it together and slice it in half like a proper sandwich.

What you have created is magical. On each slice of toasted bread is creaminess from the avocado and Vegenaise (I hate a dry sandwich, don’t you?) with crunchy lettuce and cucumbers that envelop the juicy tomato. See? Perfection.
When I make this, I use the other half of the avocado for Meghan’s second favorite sandwich. I mash the avocado half, spread it on bread, and add some nutritional yeast.
She loves it.
And just for the added cuteness, here she is proud of her latest accomplishment, learning to draw happy faces. 🙂

Wow, just came across your page and saw this sandwich. It’s my favorite too! I play around with it and will put stoneground mustard, melted pepperjack cheese and onions (fresh or sauteed). I’ll have to try the nutritional yeast sometime!

I’ve *always* loved that sandwich since my mother went FFL in the 70s. It’s excellent. Much more in total than the sum of its individual parts, but oddly enough, we always, always used alfalfa sprouts, and not lettuce. I don’t have the book anymore — so that must be my mother’s adaptation perhaps? I wouldn’t know it without crunchy sprouts! I remember another one from that book was called a Goodwich I think, something about caramelized onions in a tortilla? Made that one too, but this, the Perfectly Combined Sandwich was always and still is my fave veggie sandwich.
I ordered it so often from my office building’s former cafeteria that they asked me about it and I told them it was from Fit for Life. They added it to the menu as “A Fit Life Combined Veggie Sandwich” and I was thrilled because then it was always, always available and didn’t long to prepare, like it did when they had to make it specially for me by chopping cukes, etc. Pity that cafe is now closed and it’s a gelato store now. Bummer.

I just discovered your blog and love it. I have a fifteen month old who has been off the weight charts for months. I am always looking for new whole foods-based recipes for him. One question: I read somewhere that nutritional yeast has the same effects as msg. Have you read anything like that? I used to use that stuff all the time, as I’m mostly vegan, but stopped because I’m afraid it is just msg.

Mmm, this looks delicious! Love the particular order of things. I can be so weird when it comes to preparing a sandwich…if there is cheese AND mustard involved, they canNOT touch each other! And I could never watch my ex make a PB&J…he would put the peanut butter and jelly on the SAME slice of bread and then top it with the other slice! Who does that?!

Yes, I do use Picnik to add text to my photos. I edit in iphoto and then if I want to add text I use Picnik for that.

2. That is seriously my favorite sandwich combination. I’m not a vegetarian but I’m not a big fan of deli meat so whenever I make the fam sandwiches or get sandwiches from a shop this is my go-to combination plus onions and usually pepper jack cheese. 🙂

I used vanilla almond milk {one of my daycare kiddos has a milk allergy and that’s his preferred milk} which actually worked out GREAT because it paired nicely with the sweet corn. Oh my! Those smiley faces are just too cute! I remember the first time my son drew something that I recognized, there were all the important family members, swords, monsters, deer poo(he told me, I didn’t recognize that part, haha), etc. Why can’t he just draw smiley faces??
