There are two ways you can make an amazing kale salad. One is massage the kale like I do in this Massaged Kale Salad. Massaging the kale leaves makes them more tender.
The other way to make an amazing kale salad is to chop the leaves very finely, like I do in this Asian Kale Salad.
That’s what we’re going to do here and why this recipe works well. Chop the leaves very finely so there are no big, tough kale leaves to contend with. The simple balsamic vinaigrette dressing coats the leaves, giving them flavor and making them more tender at the same time.

Recipe Ingredients-What You Need
For the Salad
- 8 cups finely chopped kale
- 3 peaches, chopped
- 4 ounces goat cheese, crumbled
- 1/2 cup slivered almonds
- salt and pepper
For the Dressing
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons juice/water from the peaches can or jar*
- 1 teaspoon Dijon mustard
How to Make This Easy Kale Salad
I have to let you in on a little secret. If you buy one of those big bags of chopped kale, this becomes more than an Easy Kale Salad. This becomes a REALLY EASY Kale Salad. 😉 I’m all for time-saving tips when it comes to healthy eating. Buy the chopped kale and give yourself the gift of easy.
Even though the bagged chopped kale is already chopped, I chop it some more to make it really finely chopped.
Then I chop my peaches. So I’m using canned or jarred peaches for this. If it happens to be that magical summer moment (albeit BRIEF) when peaches are in season, BY ALL MEANS use fresh peaches. But, you know, that happens for about 2 minutes.
Add the chopped peaches and goat cheese to the kale.
You’ll need to toast your almonds. Place them in a dry skillet over medium heat until they are fragrant and golden brown.
To make the dressing, simply place all of the dressing ingredients into a small glass jar and shake well. This is my favorite way to make a quick and easy (and healthy!) salad dressing.Add the almonds to the salad bowl with the kale, peaches, and goat cheese.
Toss the ingredients together.
Season well with salt and pepper. Next, drizzle with the dressing on top of the salad.
Now toss it well to coat the entire salad with the dressing.
Boom. You’re done.
And damn! Look at that salad!

Instructions
- In a large bowl, put the kale, peaches, and goat cheese.
- In a dry skillet, toast the almonds over medium heat until they are starting to brown and fragrant, a few minutes.
- Add the almonds to the salad mix. Toss the salad to combine ingredients and then season well with salt and pepper.
- In a small jar, add all of the dressing ingredients and shake well until combined and the oil is emulsified.
