The teacher part came true. I taught elementary school for 8 years before Meghan was born. The author part?
Well, not yet. At least not exactly the way I’d envisioned.
I am the author of this blog, so in a sense they both came true.
I never thought I’d be writing about food, though.Some days, there are no words. I sit at the computer, stare at the picture I’ve taken to show you the recipe, and wonder how I can make said recipe sound interesting.
I want to somehow make you understand how just a few simple ingredients can come together to make something that is so much more. All the while trying to avoid overusing words like delicious. This is my long-winded way of telling you that I don’t have much to say about today’s avocado pineapple salsa. It’s my first time making an avocado salsa (instead of an actual guacamole, which of course I’ve made dozens of times) and I loved it.
So much that I ate the entire batch, by myself, in two days. It’s the perfect match of sweet and heat and is great with tortilla chips, as a topping on a fish, chicken, or a veggie burger, or even in a wrap.

Description
This Avocado Pineapple Salsa is the perfect mix of sweet + heat!
Ingredients
- 2 avocados, diced (pits reserved)
- 1 cup pineapple, diced
- 2 tomatoes, seeded and diced
- 1 jalapeno pepper, seeded and diced
- 1/2 cup cilantro, chopped
- the juice of one lime
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper (optional)
Instructions
- Mix all ingredients together in a bowl.
- Chill before serving to allow time for the flavors to develop. Enjoy!

Place avocado pits with the salsa to prevent the avocado from browning.

In case you are wondering about the story I had published in second grade, it was called Hamburger Pig Out. It was about a girl who ate so many hamburgers that she turned into a hamburger. The only way she could turn back into her regular self was to follow a rainbow to the end and find a pot of hamburgers. When she ate the whole pot of hamburgers she turned back into herself. I guess I was writing about food at a young age.
