This Avocado Pineapple Salsa is the perfect combination of heat + sweet and it goes well on everything from chicken to fish to veggie burgers!

Pineapple Avocado Salsa Recipe with chipsI’ve always loved writing.  When I was in second grade I “published” a book as part of the Young Author’s program.  In the back of the book, on the Meet the Author page, it said “When I grow up, I want to be a teacher and an author.”ingredients for pineapple avocado salsa in a bowl

The teacher part came true.  I taught elementary school for 8 years before Meghan was born.  The author part?

Well, not yet.  At least not exactly the way I’d envisioned.

I am the author of this blog, so in a sense they both came true.

I never thought I’d be writing about food, though.Pineapple Avocado Salsa close upSome days, there are no words.  I sit at the computer, stare at the picture I’ve taken to show you the recipe, and wonder how I can make said recipe sound interesting.

I want to somehow make you understand how just a few simple ingredients can come together to make something that is so much more.  All the while trying to avoid overusing words like delicious. Pineapple Avocado Salsa with a plate of chipsThis is my long-winded way of telling you that I don’t have much to say about today’s avocado pineapple salsa.  It’s my first time making an avocado salsa (instead of an actual guacamole, which of course I’ve made dozens of times) and I loved it.

So much that I ate the entire batch, by myself, in two days.  It’s the perfect match of sweet and heat and is great with tortilla chips, as a topping on a fish, chicken, or a veggie burger, or even in a wrap.Pineapple Avocado Salsa Recipe with chips

That’s enough detail, right?

In case you are wondering about the story I had published in second grade, it was called Hamburger Pig Out.  It was about a girl who ate so many hamburgers that she turned into a hamburger.  The only way she could turn back into her regular self was to follow a rainbow to the end and find a pot of hamburgers.  When she ate the whole pot of hamburgers she turned back into herself.  I guess I was writing about food at a young age.

If you make this Pineapple Avocado Salsa, I would LOVE to see it! Please snap a quick picture and share it on the Happy Healthy Mama Facebook page! Not a FB person? Share it on Instagram and tag me @happyhealthymama 🙂

The pictures in the story are the funniest part. It shows the girl eating at McDonald’s. Kind of ironic, huh? 🙂

I’m gonna have to try this. Sounds yummy. Don’t worry, I think most of us don’t end up having the life we envisioned for ourselves but usually (especially if you have kids), life turns out even better.
