I needed a quick snack the other day, so I pulled a container of salsa out of the fridge.  There was instant disappointment when I noticed it was almost gone.  Not enough for a good snack.  There was also a container of diced strawberries, leftover from a picnic lunch we’d had the day before. Hmmmmm….could this work?

I mixed the two together and it. was. perfect.  I love traditional fresh salsa and the strawberries added a surprising sweet touch.  I loved it and made a mental note to make some strawberry-tomato salsa in the future.

A few days later, I was at the grocery store and organic strawberries were on sale for $1.89 a pound.  The universe was telling me to make strawberry-tomato salsa.  So I did.  And I’m glad I did.  This is such a fun twist on traditional salsa and makes a perfect snack.  I’m sure I’ll be bringing this to some cook-outs this summer, too.

Description

A fresh and colourful summer salsa recipe


Ingredients

Scale
  • 1 lb. strawberries, diced
  • 2 roma tomatoes, cored, seeded, and diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon orange juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar (I used Xylitol)

Instructions

  1. Mix all ingredients in a medium bowl.  Cover and refrigerate for at least one hour before serving.
  • Prep Time: 10 minutes
  • Cook Time: 0 minutes

    I’m always hesitant to do the sweeter salsas but they always look so good! I need to suck it up and make one.

    oh berrries in condiment/salsa form, no garlic, almost no salt..I am sooo there!

    and i love tomatoes. this recipe is totally right up my alley (id skip the onions tho…ha!)

      I’m normally not into raw onions at all, but they really work here. Not overpowering at all.

    Love it! its really good when you add pineapple and mangos too! <3 super tropical! The second I find organic berries i'm all over this dish! =) my stupid food rule is keeping me from food I love and i'm starting to think I need to grow these guys stat!

    That is a great idea to use strawberries in salsa, Maryea–my husband and I love salsa! I love strawberries, and that is a perfect combination of sweet and savory! Thanks for thinking up the recipe 🙂

    I love fruit salsas! I had a strawberry-kiwi salsa once and it was divine! Nice change from the traditional salsa and GREAT for summertime!!
