Every time I’ve gone to the farmer’s market this summer, I’ve grabbed a head of cabbage. It really doesn’t bother me if I have no plan for it, because I cannot get enough of this Roasted Cabbage recipe. I could eat the entire head of cabbage myself when it’s prepared this way.

This is a super simple “recipe”, similar to my Simply Roasted Cauliflower. Roasting vegetables is my go-to method of cooking them. It brings out their deepest, best flavor and it’s just so easy.

It’s crazy to me that cabbage can go from this:

in about half an hour.

The flavor is incredible, so you should try this for the pure enjoyment of eating a deliciously prepared side dish. However, if you need a little more push, remember that cabbage is one of the most nutritious vegetables you can eat.

I first learned about how powerful it is when I was deep into the study of an anti-cancer diet shortly after my mom’s cancer diagnosis. “Cancer hates cabbage” became our mantra as we learned together.

Description

This Roasted Cabbage is the perfect way to enjoy a head of cabbage. It makes a delicious side dish!


Ingredients

Scale
  • 1 head of green cabbage, cut into 8 wedges and then cut the wedges in half
  • 2 tablespoons avocado oil
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 425 degrees.
  2. Place the cabbage on a rimmed baking sheet and drizzle with the oil and sprinkle the salt and pepper. Toss to coat evenly.
  3. Roast in the oven for 25-30 minutes, until the edges are a deep golden brown, shaking the pan once during the roasting time. Enjoy!
