As much as I like to think I’m helping develop a healthy eater who doesn’t require “kid food” at every meal, there is one kid sandwich that Meghan would eat at every meal if I let her: peanut butter and jelly. One time she asked for it for breakfast, and I almost obliged. Instead, Peanut Butter and Jelly French Toast was born.
There is a bit of an advantage to her loving PB & J so much. You see, I can put the name “peanut butter and jelly” in front of almost anything and she’ll at least try it. Peanut butter and jelly vegetable bake? Sure, mom.
Peanut Butter and Jelly Oatmeal is the result of pure laziness. Most mornings, I make Meghan a smoothie and then I make myself some oatmeal. Sometimes she eats oatmeal with me instead, but most mornings she wants her smoothie. The other morning I was hungry and really just wanted to make a big pot of oatmeal for both of us. I knew just the trick.
Me: “Meghan, would you like some Peanut Butter and Jelly oatmeal for breakfast?”
Meghan: “Oh, O-kay!”
Smoothie forgotten. Mom’s off the hook.
This entire process takes 5-7 minutes for me. Super quick, easy, and delicious! Oh, and healthy. No added sugars, whole grains, fruit, flaxseed, protein. What more can you ask for in a breakfast?
