As much as I like to think I’m helping develop a healthy eater who doesn’t require “kid food” at every meal, there is one kid sandwich that Meghan would eat at every meal if I let her:  peanut butter and jelly.  One time she asked for it for breakfast, and I almost obliged.  Instead, Peanut Butter and Jelly French Toast was born.

There is a bit of an advantage to her loving PB & J so much.  You see, I can put the name “peanut butter and jelly” in front of almost anything and she’ll at least try it.  Peanut butter and jelly vegetable bake?  Sure, mom.

Peanut Butter and Jelly Oatmeal is the result of pure laziness.  Most mornings, I make Meghan a smoothie and then I make myself some oatmeal.  Sometimes she eats oatmeal with me instead, but most mornings she wants her smoothie.  The other morning I was hungry and really just wanted to make a big pot of oatmeal for both of us.  I knew just the trick.

Me: “Meghan, would you like some Peanut Butter and Jelly oatmeal for breakfast?”

Meghan:  “Oh, O-kay!”

Smoothie forgotten.  Mom’s off the hook.

Description

A tasty, nutritious and quick to make breakfast


Ingredients

Scale
  • 2/3 cup rolled oats (not instant)
  • 2/3 cup water
  • 2/3 cup almond milk (or your milk of choice)
  • 2 tablespoons ground flaxseed meal
  • 1 banana, very thinly sliced
  • 1 (heaping) tablespoon natural peanut butter
  • 1/2 cup frozen blueberries

Instructions

  1. Put the oats, water, milk, flaxseed meal, and banana in a small sauce pan.  Allow to just sit there for a minute or two until the milk/water starts to bubble a little.  {See photo above}  Then, you want to whip the bananas into the oatmeal.  You need to stir vigorously to do this.  (Thanks to Katheats.com for this method)
  2. Once most of the banana has melted into the oatmeal, stir in the peanut butter and blueberries {I use frozen here because it’s off season and they give the oatmeal a fun purple tinge that Meghan likes}.
  3. Continue to cook, stirring as necessary, until oatmeal is at desired consistency.  The longer you cook it, the thicker it will become.

This entire process takes 5-7 minutes for me.  Super quick, easy, and delicious!  Oh, and healthy.  No added sugars, whole grains, fruit, flaxseed, protein.  What more can you ask for in a breakfast?

    I am also a pb&j fanatic. Your daughter might like my go-to breakfast: a whole grain tortilla spread with pb (or almond, cashew, etc) and fresh fruit (apples, pears, strawberries, banana, etc.) and rolled up. Simple, healthy and I get my much wanted nut butter fix with a hit of sweet from the fruit.

    My oldest son would not be alive today if it weren’t for PB&J’s. He eats them every day for lunch much to my dismay. I have tried and tried to get him to eat/take something else to school to no avail. Oh, well! I buy the no sugar jam, too. Only sweetened with white grape juice concentrate either from TJ’s or Whole Foods. Thanks for this recipe…..I just know my boys will totally go for this. PB&J anything is a guaranteed success at this house.

    That sounds like my house! My boys love pb&j, we do french toast, oats, pancakes, muffins, etc. They actually take [pb&j sammies to lunch almost everyday. I make sure to buy the just fruit jams so we don’t have all the added sugar. If I have some fuit compote in the fridge I will use that. Great breakfast!
