There are times when this mom gig is a thankless job. I spend a lot of time in the kitchen making homemade meals, just to have 2/3 of the people turn their nose up at what I prepared. I want my kids to eat clean, yet at times I feel like I’m up against the world to make it happen.
Reading those words gave me just the affirmation I needed to keep going on this journey. Right when I was thinking I was banging my head against the wall with my efforts to feed my family wholesome foods, my little girl reminded me that it’s all worth it.
I will keep making healthy homemade bars like these Gluten-free Raspberry Chocolate Chip Almond Oat Bars. (That’s a mouthful of a name, now isn’t it?!) They are not only gluten-free, but also dairy-free and have no refined sugar. They also make my job a bit easier because this is an easy, no fuss recipe. One bowl! Mix it all together, transfer to your baking pan and you’re good to go.
I actually decided to make these because I was dreaming of these Gluten-free Cranberry Almond Oat Bars. I decided that recipe needed a seasonal update, so raspberry bars were born! This new version is just as tasty. They are a soft bar with an incredible texture and flavor.
Knowing that Meghan appreciates the time I spend in the kitchen cooking and baking for her (and the rest of the fam) makes making these bars that much sweeter. I think you’ll love them as much as we do!
Gluten-free Raspberry Chocolate Chip Bars

Description
These gluten-free and dairy-free Raspberry Chocolate Chip Almond Oat Bars are soft and slightly gooey, a cross between a cookie bar and cake. They have an incredible light texture and the lightly sweet flavor will win over your taste buds! This is an easy, one bowl recipe that you can whip up in just a few minutes.
Ingredients
1 cup almond meal/flour
1 cup old fashioned rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsweetened almond milk
2 tablespoons oil (avocado or coconut oil, melted)
2 eggs
1/3 cup honey
1 tablespoon pure vanilla extract
1 heaping cup fresh raspberries
1/2 cup mini chocolate chips
Instructions
Preheat the oven to 350 degrees. Lightly oil an 8 x 8 inch baking dish or line with parchment paper.
In a large bowl, whisk together the almond flour, oats, baking powder, baking soda, and salt. Create a well in the middle and add the almond milk, oil, eggs, honey, and vanilla. Stir until everything is combined. Gently fold in the raspberries and chocolate chips.
Transfer the batter to your baking pan. If the raspberries are bunched together, use your fingers or a spoon to distribute them evenly among the batter. Bake in the preheated oven for 23-25 minutes, until the top is lightly golden and the edges are pulling away from the pan. Allow to cool completely before cutting. Enjoy!

I don’t have kids (yet) but it makes me feel so happy when my husband gives me a mega compliment about something I made! These bars sounds great- I kinda wanna make them right now with the blueberries in my fridge!

These look delicious and I can’t wait to make them, just need to get some raspberries! I feel we are in the same boat, as far as getting our kids to eat healthy and clean….definitely up against the world. This year at my son’s school, a different parent brought snack every day. It exposed to him to a world of junk food as most parents brought in processed junk, with food coloring to boot. We are talking “carmel popcorn”, the first ingredient is sugar. Not to mention all the disgusting “juices” which are nothing but sugar flavored water. It was a good time for me to teach him about nutrition, which he is open to. He is definitely a more health conscience transitional kinder kid than most! Thank you for all your delicious recipes!
