These gluten-free and dairy-free Raspberry Chocolate Chip Almond Oat Bars are soft and slightly gooey, a cross between a cookie bar and cake. They have an incredible light texture and the lightly sweet flavor will win over your taste buds! This is an easy, one bowl recipe that you can whip up in just a few minutes.
Ingredients
1 cup almond meal/flour
1 cup old fashioned rolled oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsweetened almond milk
2 tablespoons oil (avocado or coconut oil, melted)
2 eggs
1/3 cup honey
1 tablespoon pure vanilla extract
1 heaping cup fresh raspberries
1/2 cup mini chocolate chips
Instructions
Preheat the oven to 350 degrees. Lightly oil an 8 x 8 inch baking dish or line with parchment paper.
In a large bowl, whisk together the almond flour, oats, baking powder, baking soda, and salt. Create a well in the middle and add the almond milk, oil, eggs, honey, and vanilla. Stir until everything is combined. Gently fold in the raspberries and chocolate chips.
Transfer the batter to your baking pan. If the raspberries are bunched together, use your fingers or a spoon to distribute them evenly among the batter. Bake in the preheated oven for 23-25 minutes, until the top is lightly golden and the edges are pulling away from the pan. Allow to cool completely before cutting. Enjoy!
