The majority of kids I know are ranch monsters. Give them a cup full of ranch dressing, and they’ll dip just about anything in it, including those elusive vegetables you’ve been trying to get them to eat. If you have one of these kids, try this healthified homemade ranch dip. Packed with the goodness of avocado and totally plant-based, this is a ranch dip you can feel good about serving your family.
Creamy Vegan Avocado Ranch Dip
3 tablespoons unsweetened almond or soy milk + 1/2 teaspoon lemon juice
1/2 teaspoon apple cider vinegar
1/2 cup vegan mayo (I use Grapeseed Oil Vegenaise)
1/2 ripe avocado
1/2 teaspoon minced garlic
1 tablespoon fresh chives, chopped
2 tablespoons fresh Italian (flat-leaf) parsley
pinch dried dill
salt, to taste
In a small bowl, combine the milk and lemon juice. Set aside for at least 3 minutes. In a blender or food processor, add the milk mixture, vinegar, mayonnaise, avocado, garlic, chives, parsley, and dill. Process until smooth and creamy. Taste and add salt to your liking. Chill at least 15 minutes before serving.
As directed, this will make a dip consistency. If you’d prefer a thinner dressing to use on a salad, add more milk, a tablespoon at a time, until you reach your desired consistency.
