Everyday Whole Wheat Pancake Mix

I love to make homemade pancakes, but prefer the convenience of a mix.  I’ve had a hard time finding a healthier mix that I really love, though.  Most of the whole grain mixes I’ve tried create a pancake that is too dense and hearty.  While I like a dense, hearty pancake once in a while, Tim laments these substantial cakes that are overshadowed by the lighter, fluffier Bisquick cakes of his youth.

Making my own mix solves both of my problems.  Having a mix on hand keeps making pancakes convenient, while I can control the ingredients to make a lighter cake.  The key to the lightness is whole wheat pastry flour.  Regular whole wheat flour makes the dense cakes, but pancakes made with whole wheat pastry flour can almost pass for pancakes made with white flour.  Almost.

Description

Make ahead pancake mix for easy breakfasts


Ingredients

Scale
  • 4 cups whole wheat pastry flour*
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Mix together all ingredients and store in an air-tight container.  To ensure the freshness of your whole wheat flour, store in the refrigerator or freezer.

Notes

When you are ready to make your pancakes, simply add the following to 1 cup of the dry mix:

1 cup milk

1 egg

1/4 teaspoon vanilla (optional)

This will serve 2-4 people, depending on appetite.

*If you don’t have whole wheat pastry flour, use half whole wheat flour and half unbleached white flour.

Last night Tim played in a golf tournament and wasn’t home for dinner, so Meghan and I enjoyed an easy dinner of pancakes.  Meghan was so excited she bypassed her fork and ate with her hands:

    Great post! I just moved out of the dorms and into my first apartment a couple of months ago. I’ve made pancakes for dinner sixty days in a row, and have made a new flavor/variation each night! There are so many different flours (spelt, whole wheat, corn, buckwheat, cake, etc.). So many different ways to make them creamy (greek yogurt, cottage cheese, ricotta, pumpkin, eggs, sweet potatoes, etc.) And so many ways to top them! (Any nut butters. I have over 25 jars of different ones. Jam, coconut butter, cocoa butter, syrup, fruit, chocolate chips, bananas, the list goes on forever

    When I was a child, I loved pancakes and could have eaten them every time of the day. Pancakes aren’t breakfast food so much in Germany, rather a sweet lunch.

    Such a good idea! Having a mix is so helpful, but sometimes it’s just nice to know what’s in the things you’re making… so combining those two facets brings the best of both worlds! I’m definitely going to have to try this 🙂

    We have eaten pancakes for dinner.

    I have never made my own pancake mix. Me, my husband and daughter really like Trader Joe’s pancake mix. For sweetness, I add some honey to the batter. They are delicious!
