Making my own mix solves both of my problems. Having a mix on hand keeps making pancakes convenient, while I can control the ingredients to make a lighter cake. The key to the lightness is whole wheat pastry flour. Regular whole wheat flour makes the dense cakes, but pancakes made with whole wheat pastry flour can almost pass for pancakes made with white flour. Almost.

Last night Tim played in a golf tournament and wasn’t home for dinner, so Meghan and I enjoyed an easy dinner of pancakes. Meghan was so excited she bypassed her fork and ate with her hands:
Pancakes is one meal where she will always clean her plate:
This was a perfect dinner for just Meghan and me.
Question: Do you like pancakes for dinner?
Jennifer says
Have you tried using this for waffles in a waffle maker? If so, are the directions the same?
Erica @ A Healthy Habit says

I just came across you site and am so enjoying your posts and photography. Like you, I am a mom focused on feeding my family wholesome, seasonal food built on the premise of eating a rainbow a day of colorful fruits and vegetables. (Desserts and meats are also part of that rainbow, but in moderation.) Look forward to following you for more recipe inspiration! Thank you.

Great post! I just moved out of the dorms and into my first apartment a couple of months ago. I’ve made pancakes for dinner sixty days in a row, and have made a new flavor/variation each night! There are so many different flours (spelt, whole wheat, corn, buckwheat, cake, etc.). So many different ways to make them creamy (greek yogurt, cottage cheese, ricotta, pumpkin, eggs, sweet potatoes, etc.) And so many ways to top them! (Any nut butters. I have over 25 jars of different ones. Jam, coconut butter, cocoa butter, syrup, fruit, chocolate chips, bananas, the list goes on forever
Maryea says
Wow, how fun! And 25 nut butters?!! That’s quite a collection! 🙂

I used to love brinner! (breakfast for dinner) I don’t have it much these days but i’m sure i’d still be a fan. : )
Maryea says
It was my favorite growing up, too. Looks like I passed that on to my little one. 🙂

When I was a child, I loved pancakes and could have eaten them every time of the day. Pancakes aren’t breakfast food so much in Germany, rather a sweet lunch.
Maryea says
How interesting! I could do pancakes for lunch, too. 🙂

It is an execellent idea! I will do prepar the mix today and have pancakes for Saturday morning breakfast.
Ashley @ The Drunk Squash says
Such a good idea! Having a mix is so helpful, but sometimes it’s just nice to know what’s in the things you’re making… so combining those two facets brings the best of both worlds! I’m definitely going to have to try this 🙂
Kelly says
Thanks! My last attempt at pancakes with wheat flour was met with displeasure by the fiance. I’ll sure he’ll love these though!!
Maryea says
They are MUCH, MUCH better with whole wheat pastry flour. Have you tried it? Give it a try and let me know what you think!

I’ve been meaning to make a mix forever! Thanks for the recipe doll! =) I also am allll about the convenience of mixes … without the preservatives! =) yay!

We have eaten pancakes for dinner.
I have never made my own pancake mix. Me, my husband and daughter really like Trader Joe’s pancake mix. For sweetness, I add some honey to the batter. They are delicious!

So funny! We just had pancakes/waffles last night! I needed something fast and that was it. I’ll have to give these a try though since I don’t have a recipe for a mix and that is so convenient.
