This Chickpea Salad recipe is actually perfect for busy days. Need a quick dish? This is it. Need something to bring to a picnic or potluck? This is it. Need a fresh lunch in a hurry? Yep, this is it. If you have a food processor , you can throw this salad together in about 10 minutes. If you don’t, it’ll take just a touch longer.
These are the days I’m happy I have a food processor. The fresh vegetables that are chopped in this bright and healthy salad got that way in about 10 seconds. Chop (or process) your vegetables, add them to the chickpeas, whip up the dressing, and boom. Done.This Chickpea Salad is very similar to the Tricolor Chickpea Salad you can find at Costco and Kroger. A happy difference is that I used extra-virgin olive oil instead of canola oil and there’s no orange juice concentrate or added preservatives. It’s so easy to make at home, if you love Costco’s Tricolor Chickpea Salad, you should try this recipe instead! I just used regular canned chickpeas instead of the tricolor variety, but you’ll find this healthy salad recipe is not lacking any flavor. The bright citrus vinaigrette (<—I hate spelling that word!) is fabulous and the onions, cilantro, and bell peppers add a great flavor punch. If you love chickpeas, you should also try this Chickpea Salad Sandwich and this Crispy Chickpea and Kale Salad. Both are awesome!

Description
Easy and flavorful Chickpea Salad. This is just like the Tricolor Chickpea salad from Costco. Great easy, healthy recipe!
Ingredients
1/2 large red bell pepper
1/2 large yellow bell pepper
1/2 medium onion
3 green onions, green part only
1 cup fresh cilantro
2 (15 ounce) cans chickpeas, drained and rinsed
1/4 cup extra-virgin olive oil
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
2 tablespoons white wine vinegar
1 tablespoon honey (use agave nectar for strict vegans)
1/4 teaspoon coarse salt
Instructions
1. In your food processor, pulse the first five ingredients (through cilantro) until they are well chopped. (Alternatively, you can chop everything by hand.)
2. In a medium bowl, mix together the chopped vegetables and chickpeas.
3. In a small bowl, whisk together the olive oil, orange juice, lime juice, white wine vinegar, honey, and salt. Pour over the chickpeas and vegetables and mix well.
4. This benefits from a little chill time in the fridge, but can also be served right away. Enjoy!

My husband loved the Costco salad so I made this recipe. It was close but he said there was something missing so I googled a few other recipes and one mentioned honey mustard. We added a generous tablespoon of honey Dijon mustard to the recipe and, bingo, that was it!

I’m sorry you didn’t like the onion flavor here. I feel that 1/2 medium onion in ratio with 3 cups of chickpeas is perfect, but if you’re not a fan of onion I guess it may be too strong and you would need to adjust accordingly.
