This Chickpea Salad recipe is easy to make and is a flavorful side dish!Whew. Life is busy. This is my first time sitting down all day. I have a wet load of clothes in the washer, but can’t put them into the dryer until I fold the clothes (or just take them out…that would work, too) that are waiting for me there. I have to finish prepping dinner before getting Meghan at the bus stop and then I’ll get her a snack and it’ll be time to bring her to gymnastics. You see? Busy.
This Chickpea Salad recipe is actually perfect for busy days. Need a quick dish? This is it. Need something to bring to a picnic or potluck? This is it. Need a fresh lunch in a hurry? Yep, this is it. If you have a food processor , you can throw this salad together in about 10 minutes. If you don’t, it’ll take just a touch longer.
These are the days I’m happy I have a food processor. The fresh vegetables that are chopped in this bright and healthy salad got that way in about 10 seconds. Chop (or process) your vegetables, add them to the chickpeas, whip up the dressing, and boom. Done. This Chickpea Salad is very similar to the Tricolor Chickpea Salad you can find at Costco and Kroger. A happy difference is that I used extra-virgin olive oil instead of canola oil and there’s no orange juice concentrate or added preservatives. It’s so easy to make at home, if you love Costco’s Tricolor Chickpea Salad, you should try this recipe instead! I just used regular canned chickpeas instead of the tricolor variety, but you’ll find this healthy salad recipe is not lacking any flavor. The bright citrus vinaigrette (<—I hate spelling that word!) is fabulous and the onions, cilantro, and bell peppers add a great flavor punch. If you love chickpeas, you should also try this Chickpea Salad Sandwich!
I hope you’ll try this on one of your busy days!Print
