What is a sure-fire way to get your kids to eat broccoli? Okay, let me be honest here. There are no sure fire ways to get your kids to eat broccoli, so allow me to rephrase that. What are some ways to up your chances of getting your kids to eat broccoli?
1.) Add cheese.
2.) Bake it into a fun cupcake shape.
Neither of these is actually true for Meghan, since she prefers her broccoli plain, but I know there are many kids out there who shudder at the thought of eating the tree-like vegetable. And sometimes you have a guest with a child-like palate at dinner. In this case it was my father-in-law. I’ve mentioned him before. He’s not big on vegetables and broccoli is one that if I served it plain he would not touch. He ate his Broccoli Cheddar Millet Cup and exclaimed, “I like it! You can’t taste the broccoli. And that’s a good thing.” Meghan ate some of it once I fished out the broccoli pieces and she could discern what she was eating. Go figure.
An added bonus to these cups is that you are also eating a whole grain. Millet is a whole grain full of important nutrients. It’s a tiny, yellowish ball-shaped grain and you can find it in the grain section of most grocery stores. It also happens to be super cheap, so you can use it without breaking the bank.

Ingredients
- 2 cups broccoli florets, cut into small pieces (the pickier the eater, the smaller the pieces should be)
- 1 cup shredded organic cheddar cheese
- 1/2 cup millet
- 1 cup vegetable broth or stock
- 1/2 cup plain yogurt
- 1 tablespoon stone ground mustard
- 1 teaspoon dried thyme
- 1 tablespoon flaxseed meal + 3 tablespoons water
- 1/4 cup panko breadcrumbs (or any type of breadcrumbs will work)
Instructions
- Preheat the oven to 350 degrees and spray eight muffin tins with non-stick cooking spray.
- In a small bowl, mix together the flaxseed meal and water. Allow to sit 3-5 minutes {it should develop a gel-like consistency}. In a large bowl, mix together the broccoli, cheese, millet, vegetable stock, yogurt, mustard, and thyme. Add the flaxseed mixture and stir until everything is well-combined. Use a small measuring cup to evenly distribute the mixture into the muffin tins. They should be filled almost to the top, but make sure you leave a little room. {I filled one too full, and it overflowed a bit.} Pay attention to the ratio of broccoli and wet ingredients, you want it to be close to equal in each cup. Sprinkle each cup with panko bread crumbs. Bake for 40 minutes and allow to sit at least 10 minutes so the mixture can set.

Those look and sound so good. My kids love brocolli with cheese sauce. They will eat it plain but I get complaints with no cheese. I will have to try these, I have never tried millet!

Strangely, Meghan will not eat anything with sauce on it. Even if it is her beloved cheese. I hope this is just a 2 year old phase that she’ll outgrow because I hate deconstructing all of her meals so they don’t include sauce.
