It’s definitely not zucchini season where I live. But it is baked oatmeal season. Warm, soft, creamy baked oatmeal is one of my favorite winter breakfasts. While I try to use in-season vegetables most of the time, adding vegetables into my kids’ breakfast in the form of this Zucchini Chocolate Chip Baked Oatmeal makes me grateful we have access to even the out-of-season vegetables all year long.

This Zucchini Chocolate Chip Baked Oatmeal is a perfect example of how you can squeeze some extra veggies into your kids’ day in a healthful, delicious way.
My kids eat and love a lot of different vegetables, but zucchini isn’t normally one of them. They will sometimes eat them raw, but they don’t enjoy the texture of cooked zucchini. Trust me, I’ve prepared zucchini for them many different ways, and baking it into a breakfast treat is by far their favorite.
This Zucchini Chocolate Chip Baked Oatmeal has a soft, creamy texture, and you barely notice the zucchini among the melted chocolate chips. The chocolate chips make this plenty sweet, so it only needs a touch more maple syrup. The result is a divine breakfast you’re kids will probably beg you to make over and over! Description
This Zucchini Chocolate Baked Oatmeal is easy to make and a great way to add vegetables to your breakfast!
Ingredients
- 3 cups old fashioned rolled oats
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups unsweetened vanilla almond milk
- 1/4 cup maple syrup
- 1 large egg
- 2 cups shredded zucchini
- 1/2 cup chocolate chips (I use mini chocolate chips)
Instructions
- Preheat your oven to 375 degrees.
- Lightly grease a medium baking dish and set aside.
- In a large bowl, mix together the first 6 ingredients.
- Add the zucchini and then stir in the chocolate chips.
- Transfer the mixture to the baking dish and bake in the preheated oven for 20 minutes. Enjoy!

I’m searching through different blogs to find new recipes I can try to make and share with my 2.5 year old. We have been having a very hard time getting him to eat at meal times in general but especially things that are better for him. I’m seeing behavioral problems and I’m afraid its in part do to his nutrition but I get overwhelmed when trying to figure out what kind of steps I should take in hopes to help him come back to his happy careless self instead of his sassy, upset and aggressive demeanor.

I made this recipe last week, except I made it into a cake (9 inch round cake) and I baked it for ~30 minutes, it came out great! Instead of cinnamon buttercream frosting I made cinnamon cream cheese frosting and it was incredible!! The cream cheese frosting was the perfect match for the pumpkin flavor–I would highly recommend!
