We’ve got four kids this week. My two nieces are staying with us for the week, doubling our load from two to four. Can I just give a hats off to all moms with more than two kids? You are absolute heroes.
I thought adding two more kids to the picture wouldn’t make a difference. But whew! Life is definitely more challenging with four. Everything takes longer.
I thought getting out the door on time was tough with two. We’d never be on time if I had four kids.
I thought bedtime was tricky juggling two. Getting four kids to bed by 8:30 is crazy hard.
I thought getting two kids to agree on things was difficult. Getting four kids to agree one one thing is near impossible.These popsicles are the first things they’ve agreed on all week.
Although the fourth one wouldn’t agree to be in this picture.
I don’t want my brother and sister-in-law to get the wrong idea. Life has been fun this week and we’ve enjoyed having the girls. We just think that maybe we made a good choice in not trying to have more babies. 😉

Description
A tasty summer treat!
Ingredients
4 cups whole strawberries, hulled
juice from 2 large lemons (a little more than 1/3 cup)
1/3 cup agave nectar (or raw honey)
Instructions
Put all ingredients in a blender or food processor and blend until super smooth. Pour into popsicles molds and freeze. I use my Zoku Quick Pop Maker and LOVE, LOVE, LOVE it! Enjoy!

Do the strawberry seeds get blended so you get a really smooth texture? Yours don’t seem to have ant seeds and my granddaughter dislikes them in other popsicles I have made.

Yes they get blended with the blender I use! If you have a powerful blender it should do the same!

Lol – you think x3 or x4 is hard when they are small to medium – Sorry to burst your bubble but when they are more ‘grownup’ ( and I use that word ironically!!) they are so much harder to please / placate / round up / bring together. As a single parent to 3 they weren’t too bad to take turns or do a bit of what everyone wanted. With 3 x ‘ grownup ‘ children I feel like a human punchbag and am longing to cast away on a remote island . Lol x

This is good to know – my Zoku maker says that honey won’t work, and that recipes needed sugar, so I’m happy that’s not the case!

We use xylito (not sure of the spelling) but it used to make the homemade toothpaste. (find it in health foods stores) we use it for baking and a kid friendly sugar alternative.

I have 3 kids and I’ve always said they hand you your third baby when it’s born and simultaneously punch you in the face. It is insane how much more work and how much harder it is to have 3 kids. My husband and I often laugh at ourselves when we thought 2 was hard. 2 was a picnic, a breeze, a vacation, a breath of fresh air….though I am sure that the parents of 4+ feel that way about three kids….but on the other side of that coin 3 kids hasn’t tripled our love and joy-it has infinitely multiplied it in a way we never would have known without three. We are SO grateful we had three (even though the work and frustration is through. the. roof!)

Awww–now you’re making me wonder about that third person we would certainly love immeasurably. I think it’s hard to ever be totally satisfied with your “number” and not think about what it’d be like with one more little person to love.

These look fabulous! I’ve been meaning to get popsicle molds but I’m conflicted because it’s plastic, right? I know there are stainless steel molds but these seem to be much better.

I used the Zuko Quick Pop Maker for these. The sticks are made of plastic, but the mold itself it stainless steel. I also have another set of stainless steel molds that I like a lot that I use bamboo sticks with. There are definitely great non-plastic mold options out there. The Zuko Quick Pop maker is my favorite because it makes the pops in 7 minutes!!
