There was a time, not too long ago, when my night time snack of choice was cereal. Seriously, I used to eat my weight in cereal. Although I am still tempted by $5.00 boxes of Peanut Butter Bumpers in the grocery store, I mostly stay away from boxed cereals these days.
Roasted chickpeas are an easy snack and hit the spot at night, or whenever your snack attack hits. Eating these you are going to get a great dose of fiber and protein, so expect them to fill you up nicely.

Maple and Spice Roasted Chickpeas
- Total Time: 35 minutes
- Yield: 1 1/2 cups 1x
Description
An easy and nutritious snack
Ingredients
- 1 1/2 cups cooked or 1 can chickpeas, rinsed and drained
- 1/8 cup pure maple syrup
- 1/8 teaspoon ground ginger
Instructions
- After you have rinsed and drained your chickpeas, allow them to dry for 10-15 minutes on a paper towel. Preheat the oven to 400 degrees. Put the chickpeas in a medium bowl. Drizzle with maple syrup and ginger and toss to coat evenly.
- Spread them evenly on a baking sheet and roast for 20-30 minutes, tossing the chickpeas around the sheet a few times during the cooking time. Watch to ensure they don’t burn!

I love the mixture of sweet maple syrup and spicy ginger here. The ginger isn’t too overpowering; these are still kid-friendly. They are also husband-friendly, so go ahead and make them for the whole family.

Ok, this is a WONDERFUL idea. I was up to my ears in chickpeas and needing a new snack idea, so this was a welcome one indeed!
Also, my husband and I are soon going on a long flight to South America, and this seems like a perfect airplane snack. Since I can’t eat wheat or corn very well, this is a great alternative to rice snacks!

Hi Maryea – I made these today but used ginger on half and curry powder on the other half. They came out kind of mushy though – do they come out crispy for you?

They do come out crispy. I would say half of them are really crispy and the other half are semi-crispy. Definitely not mushy though. Every oven is different–it sounds to me like they needed to cook longer.

Haha, I used to love Peanut Butter Bumpers! I still savor the rare times I buy them, but I’m also trying to not eating cereal for a while since it too used to be my snack of choice, any time of day, every day, day after day. It was all I ever ate my first year of college! Hmm, dark chocolate always hits the spot for my late night sweet tooth, or some plain yogurt with a wee bit of granola and cinnamon is always crunchy and tasty!

Ever since I was pregnant and saw someone on the Food Network deep fry chick peas, I have loved them–they are filling! I have never deep fried them, but I put them in the microwave for a bit, and then put salt, cracked pepper and dill on them–I love dill!
I will have to roast them in the oven sometime, though. It sounds good!

What a quick and clever snack! Otherwise, when I’m in a munchy mood in the evenings I usually pop a hug bowl of popcorn or munch on nuts. Give me a glass of wine as well and I’m a happy camper… 😉

Okay, so I have a question for you. I tried making roasted chickpeas, and they were still soft. They were delicious, but my husband and I both expected them to be crunchy after roasting. Are yours crunchy after roasting? I’m thinking I didn’t cook them long enough.
I lied, I have two questions. The other is where do you store these? I stored mine in the refrigerator but would rather have stored them on the counter if I could. I’ve always wondered where people store their roasted chickpeas.

My vary from very crunchy to semi-crunchy. Cooking time definitely impacts how crunchy they are, so you may need to cook them longer. I store them on the counter, not the fridge. I try to eat them up quickly, though, because they do lose their crunch the longer they are stored.

I actually haven’t tried a sweet roasted chickpea recipe before, but I’ve tried savory ones and I love them! I even made salt and vinegar chickpeas once and my hubby loved them. Score! I’m going to make them again soon so I can post them. I will try these. The evening snacks are getting me lately :/

Yum! I seriously have about 14 “snacky” chickpea recipes that I want to make. I love chickpeas and the idea of eating them as a crunchy snack is great! And you have both a sweet and a savory option. I’ll have to give them a whirl. I’ll let you know when I do!
