I prefer not to use the word “terrible” when describing my daughter, as that might give the wrong impression. Someone might think I don’t adore her like I do or love her more than I realized was possible. But now that I am officially a mom of a two-year-old, I can relate to the tired mom who coined the phrase “Terrible Two’s”.
I’m still not going to call her terrible, but she is two. And at times, my two-year-old can be trying.
Like when she refuses to start eating dinner until she gets some “new cheese” because the white cheese that she ate just yesterday is now “icky cheese”.
Since she’s going to eat cheese anyway I decide to give her the requested orange cheese to prevent a dinner-time meltdown.
Then she decides that the cheese is all she is going to eat. None of the spaghetti and meatless balls. None of the kale chips she usually devours. Just cheese. Oh, and raspberries for dessert. Cheese and raspberries. That’s balanced, right?
Really, though, she’s not terrible. Terrible is a strong word, but she can definitely be a tiring two-year-old.
Like when she sucks off all of the toothpaste and refuses to let me help her brush her teeth.
And don’t even think about trying to close that door for her. “Meghan do it!”
It’s very tiring when she turns bedtime into playtime and her chair becomes a slide.
You just have to try to keep up when it comes to what friends she wants to accompany her in her crib for the evening.
When you spend your day trying to figure out how to get your two-year-old out of her pajamas that she is adamant about wearing to the library, a moms’ night is welcome every once in a while. Which is why when I had the opportunity to spend the evening with some friends at a Nail and Spray Tan party, I decided to take it.
Even if it meant coming home with dark purple nails and looking like I belong on the cast of Jersey Shore. Don’t judge.
I know you don’t come here to see nearly X-rated photos of me, so I’ll get right to the recipe.
I needed something to bring to the girls’ night, and it needed to be somewhat quick. Hummus is perfect for that. I did have to roast the garlic, but I planned ahead and did it early in the day.
I normally make just basic hummus, which I love, but wanted something a little different. I made my usual hummus with roasted garlic, and I loved the results. I am a big fan all things roasted, and garlic is one of roasting’s biggest stars. It takes on a delicious, sweet flavor when it’s roasted. If you haven’t had it, you are seriously missing out.
PrintGirls’ Night Roasted Garlic Hummus
- Total Time: 5 minutes
- Yield: 10 servings 1x
Ingredients
- 1 (15 ounce) can chickpeas, liquid reserved
- 1/2 cup tahini
- 1/4 cup extra virgin olive oil
- 4–5 roasted garlic bulbs (see this post for how to roast garlic)
- Juice of one lemon
- salt and freshly ground black pepper
- 1 tablespoon sweet paprika+ more for garnish
Instructions
- Put the chickpeas, tahini, olive oil, garlic, paprika and lemon juice in a food processor. Sprinkle with salt and pepper and process. Add the bean liquid as needed to create a smooth puree. {I used about 3/4 cup liquid} Sprinkle with paprika for garnish.

Hummus is a healthy snack and can be served so many ways. It’s great as a sandwich spread, with pita chips, or with raw veggies. It’s also perfect for a girls’ night. 🙂

Love this post. Is she 2.5? That is when both of mine hit the trying stage. The early twos were fine and I was smugly thinking we were out of the clear and my kids were clearly so wonderful due to my perfect parenting and then, wham, two and a half hit. Keeps us humble and on our toes. 🙂

I love your Meghan stories! They make me feel so much better about my Addie. There are times when I wonder if she is always going to be this difficult and if it’s something I am doing wrong. 🙁 Every day is a new day and my patience is tested. The fact that I am very sleep deprived makes being patient very hard sometimes.
PS. I love the pictue of Meghan in the crib with her “friends”. Addie sleeps with so many “friends” sometimes that there is barely any room for her! She also insists on having them all around her head so she usually wakes up sweating. Ugh! Doesn’t matter what I tell her though, she will do what she wants and if not will have a meltdown.
