Apparently all of these carrot cake themed recipes on one blog was not enough for me and I needed to create another. Too many healthy recipes that taste like carrot cake? Never.
This recipe for Carrot Cake Energy Balls is similar to my No Bake Carrot Cake Bars, except this time I left the frosting off and I added some coconut flour to make these have even more cake-like texture. It worked so well!
You really are eating cake in the form of a ball. A healthy ball. Now that sounds weird. Forgive me.
But really, these Carrot Cake Energy Balls are made with all these nourishing ingredients and nothing more!
These are so quick and easy you can have your cake in no time! Just give the ingredients a pulse in your food processor and you’re ready to get rollin’.
