Healthy eating doesn’t have to taste like healthy eating. Healthy eating can taste like cake. Why not? In the case of these energy balls, we’re talking carrot cake. One of my favorite things on earth.

Apparently all of these carrot cake themed recipes on one blog was not enough for me and I needed to create another. Too many healthy recipes that taste like carrot cake? Never.

This recipe for Carrot Cake Energy Balls is similar to my No Bake Carrot Cake Bars, except this time I left the frosting off and I added some coconut flour to make these have even more cake-like texture. It worked so well!Β Inside of the Carrot Cake Energy Balls recipe

You really are eating cake in the form of a ball. A healthy ball. Now that sounds weird. Forgive me.

But really, these Carrot Cake Energy Balls are made with all these nourishing ingredients and nothing more!

These are so quick and easy you can have your cake in no time! Just give the ingredients a pulse in your food processor and you’re ready to get rollin’.

These Carrot Cake Energy Balls are great for breakfast, snacks, as part of a school lunch, or even as a sweet treat after dinner.

Except this is a dessert that’s totally sweetened without any added sugars, just dates and raisins. Did you see those ingredients up there? If we had an ingredient label, carrots would be #1. How awesome is that?

Description

Have your favorite dessert any time with these healthy Carrot Cake Energy Balls!


Ingredients

Scale
  • 1 cup walnuts
  • 1/2 cup pitted dates
  • 1/2 cup raisins
  • 2 cups shredded carrots
  • 1 cup rolled oats
  • 1/4 cup coconut flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt

Instructions

  1. Place the walnuts, dates, and raisins in the food processor and process until everything is well broken down.
  2. Add the rest of the ingredients and pulse until it is combined.
  3. Roll the mixture into 1 inch balls. Enjoy!

    My son loves these at home and I’d love to pop these in his lunch box but he goes to a school with a no nut policy. Any ideas of making it nut free? could I change the walnuts for sunflower seeds or would that just not work?!

      Can you get coconut flour? I would try a smaller amount (start with 1/2 cup) coconut flour in place of the oats. Please let me know if you try that!
