5 Minute Pantry Dinner

We made it home from our vacation at about 5 o’clock tonight.  Our fridge is nearly empty and the pantry down to its barest of bones.  But after being away for almost 2 weeks and in the car for 9 hours today, the last thing I wanted was to eat out.  So I scoured the pantry and found some convenience food to fill my hungry belly.

These four ingredients were quickly transformed into a makeshift meal.

Little olive oil in the pan, add the already-cooked rice and beans and gently heat.  Throw some Italian seasonings on it and you have yourself a 5 minute dinner.

I hope you didn’t get too excited by the title.  This hardly qualifies as a “dinner”.  I’m glad I had a few convenience foods on hand in my pantry, though.  This big bowl ‘0 rice and beans hit the spot in an emergency situation.

Now I’m off to tackle the unpacking and laundry that needs to be done.  Okay, maybe I’m going to indulge my guilty pleasure and watch The Bachelorette.  Don’t judge.  The laundry will get done tomorrow and I’ll be back soon with some real recipes! 🙂

    Thanks for the above, well, see my dog ate my dinner (some beef jerky) and now all i have in the pantry are some beef ramen noodles, some ground beef in the fridge, some eggs, and some tomato and cilantro. i also have some cabbage. oh, and some apple pie from about 2 months ago and half a bottle of tartar sauce. what can i make. takeout isn’t an option. i’m flat broke. spent my last 20 at a bar.

    This question may be a little off-topic, We all have a few standby meals that we can make quickly, usually with what’s already in the pantry, for breakfast, lunch, or dinner. You probably even make them every week (or day!). Please share!

  4. Sometimes the most simple meals are the best. I love beans and rice! Lots of recipes complicate it, but it’s best just like you made it!

  5. This is a great go-to-meal when in a rush. We just recently did something similar on a t-ball night and it was a hit. Sometimes the simplest things really are the best.

  7. Amen to Bentley being an idiot! I don’t have TV so I have to wait till tomorrow to watch it 🙁 Guess I will have to get my work done in the morning so nap time I can curl up with my computer 🙂
