When I want a quick-and-easy lunch option, I often turn to the sandwich.  Let’s face it:  I often need our lunches to be quick and easy. Sometimes we are out and about during the morning and I get home with only a few minutes to throw together a healthy lunch.  I try not to get too dependent on Meghan’s favorite sandwich, the standard peanut butter and jelly.  I think it’s important to add variety to a toddler’s diet and and this sandwich is  super kid-friendly, yet very nutritious, so it’s a great way to switch up your regular sandwich routine.

Tahini is ground sesame seed paste; its most popular use is as an ingredient in hummus.  Tahini is high in B vitamins and is also a great source of calcium, magnesium, zinc, iron, protein, and fiber.  You can find it in the ethnic foods section of most well-stocked grocery stores.

I gotta tell you, as much as I created this sandwich for Meghan, I love it.  It is so tasty.  You can use the other half of the banana to make yourself a sandwich, or just slice it up and serve as a side.  Enjoy!

This sounds good and easy! Love it. I need new sandwich ideas. We have been eating lunch outside or at the park lots lately and I usually just make sandwiches.
