I decided the best plan to tackle summertime dinners was to have a monster list of quick and easy, healthy dinners. All the dinners on this list can be prepared in 30 minutes or less. We are the kind of family that eats vegan on Monday, Paleo on Tuesday, vegetarian on Wednesday, and gluten-free on Thursday, and carb heavy on Friday. In other words, we don’t follow any specific diet but love to enjoy healthy, whole food dinners. There’s something here for everyone no matter what kind of diet you follow. Enjoy!
