Toddler Eats: Cinnamon Raisin Cookie Bars

All right, I’ll admit it.  I like the homemade ‘Larabars‘ just as much as Meghan does.  I do make them especially for her, though, so I will call them Toddler Eats.  These fruit and nut based bars have become a go-to snack for us; they are really perfect.  They take about 5 minutes to make.  For a homemade snack (REAL FOOD!), that is impressive.  They are easy to travel with if you need to snack on the go.  Meghan often eats her snack in her stroller while I walk or run.  {Okay, walk more than run.  I like running alone much more than with a stroller, but that’s no excuse.}  The only problem with these babies is that Meghan likes them so much that sometimes she wants to eat them with every meal.  She has a slight obsession.  I say, “lunch time!” and Meghan responds, “Larabar.”  I usually pretend I didn’t hear her and say, “Okay, here’s your peas!” 🙂

Description

A tasty and healthy homemade snack


Ingredients

Scale
  • 1 cup pitted dates (~18 medium dates)
  • 1 cup raisins
  • 1/2 cup unsalted peanuts
  • 1/2 cup whole, raw almonds
  • 1 teaspoon cinnamon


Instructions

  1. Place all ingredients in a food processor and process until a small ball starts to form.  This takes about 2-3 minutes.  Transfer the mixture to wax paper and use your fingers to shape the dough into a rectangle.
  2. Use a knife to cut into bars.

  1. These are delicious! I didn’t have peanuts so I used raw cashews instead. My almost-two-year-old loved them…and snacked on all the ingredients as I was making them :). It’s so important to me to have easy, healthy snack options on-hand…I have enjoyed so many of your recipes already, and have many more to try! Thank you!
