So my Eat More Plants Challenge Update is going to be not much of an update at all, and instead of boring you with the fact that I’ve only eaten crackers and a ginger soother drink since Tuesday, I thought I’d share some ideas for eating vegetables with breakfast.
One thing I’ve noticed in the days I have been eating and keeping track of my vegetable consumption is that when I have vegetables with breakfast it’s much easier to get in the allotted amount during the day. I seem to feel better when I have vegetables with breakfast, too. Maybe it’s all in my mind?

My family had a similar week but not as bad. My husband has been sick all week so I’ve just been trying to keep everything going with the kids. And so we didn’t even keep track this week I had good intentions but it just didn’t happen. And when my husband is the cook and he’s out sick I scramble to get dinners. But I tried. The thing I have gotten the most out of this is making better choices when I was hungry and wanted something I would make myself go for a plant instead of maybe something else I wanted so that has been good. We’ll be back on track for next week. We did have the pumpkin muffins this week.
