Easy Sauteed Broccoli (Luke’s Favorite!)

Sometimes you just need a quick side dish to round out a meal.  Or, sometimes, you realize your kids haven’t eaten anything green in days and your only other option is to serve a green smoothie with dinner.

This recipe is for those days.  Close up of broccoli and lemonsIt’s a simple recipe for sure.  So simple, in fact, I’m almost embarrassed to post it. I mean sauteed broccoli isn’t exactly something you need a recipe for.

Or maybe some of you do? Sometimes I forget that the dinner time rush is real and it can be stressful trying to come up with healthy ideas that your family will love. Or even like.

And this is the recipe that turned Luke into a broccoli lover. How can I not share it?  It’s the recipe that I’ve made countless times over the last 18 months.

Recipe Ingredients–What You Need

Broccoli

Broccoli is the star of this recipe. I cut mine into small florets because they cook quickly and are easy to eat without a knife. Broccoli is one of the most nutritious vegetables you can eat! It’s high in vitamin C, vitamin K, iron, and potassium, and is a great source of fiber. It also has more protein than most vegetables!

Avocado Oil

Avocado oil can withstand the high temperature needed for sauteed broccoli as it has a high smoke point.

Fresh Lemon Juice

The lemony flavor is perfect here and lemon also adds more vitamin C!

Coarse Salt

Salt is necessary for flavor in this recipe.

How to Make Sauteed Broccoli

You might be surprised at how easy this is and just how tasty it is! Easy and healthy can equal tasty!

  1. Heat the oil in a large skillet.  Add the broccoli and sauté until bright green, about 2-3 minutes.
  2. Add the lemon juice and salt and sauté until just tender, another 2-3 minutes.  Serve immediately.

If you’re not convinced, maybe you should add this Cashew Cheese Sauce to the top! Nobody can resist a cheese sauce, even if it’s vegan!

Description

A quick and easy side dish with fresh broccoli and lemon!


Ingredients

Scale

1 bunch broccoli, trimmed and cut into bite-sized pieces

3 tablespoons olive oil or avocado oil

2–3 tablespoons fresh lemon juice

1/2 teaspoon coarse salt


Instructions

  1. Heat the oil in a large skillet.  Add the broccoli and sauté until bright green, about 2-3 minutes.
  2. Add the lemon juice and salt and sauté until just tender, another 2-3 minutes.  Serve immediately.  Enjoy!

    Wow, your website sure looks great! Your pictures are amazing! Great job!

    Thanks for the recipe, too ~~ I really appreciate your “simple” ideas and am glad you posted this. For a lot of people, healthy cooking automatically seems intimidating ~~ it’s nice to get some good solid, healthy recipes to add to the rotation. I am going to try this one on my husband!

I think I feel a little pressured sometimes as a food blogger to have every recipe I post be something unique or something that’s not been done before. I try to remember that most readers are just like me though, busy people looking for simple, whole food recipes their families will like. Thank you for affirming my thoughts on this. 🙂 I hope your husband enjoys it! Tim is not a broccoli lover, but eats it this way.

    Simple recipes are the best recipes! And if you can get folks to eat their greens, that’s a major win! Broccoli is one of my favorite easy side dishes, so I’ll have to give this recipe a squeeze (get it? squeeze? like lemon…squeeze…I’m done) next time I get a crown o’ broc 😉

    Broccoli is one of my favorite vegetables. It’s perfect in soups, salads, or just on it’s own. I love this broccoli. Simple is good, girlfriend! A little lemon really brings out the goodness of this hearty veg!

    This is very similar to how I make broccoli, as well. The only difference is I roast the broccoli for about 20 min., then pull it out and squeeze one lemon on it and sprinkle w/salt and my kids’ love it.

      I love roasted broccoli as well! Luke prefers it this way for whatever reason. I tried it like this when I was in a hurry and didn’t have time to heat the oven and roast it, and have been making it this way more than roasting ever since!
