Description
With Greek yogurt, banana, peanut butter, and fresh strawberries covered in bittersweet chocolate, these easy bars are a delicious, healthy treat.

- 1 banana
- 1 1/2 cups plain Greek yogurt
- 1/3 cup natural peanut butter
- 1 teaspoon pure vanilla extract
- 1 cup small strawberry pieces
- 6 popsicle sticks
- 16 ounces bittersweet chocolate bars, broken into pieces
Instructions
- In a medium bowl, mash the banana well. Add the yogurt, peanut butter, and vanilla and
whisk until smooth. Fold in the strawberry pieces. - Drop the yogurt mixture into six even circles on a baking sheet lined with parchment paper.
- Use a rubber spatula to smooth and even out the circles. Add one popsicle stick per circle,
making sure it’s in the middle of the yogurt and not sticking out either side. - Place the tray in the freezer and freeze for 2 hours.
- Just before the time is up, melt your bittersweet chocolate using the microwave or a double
broiler. - Once the chocolate is melted, dip the frozen Greek yogurt bars in the chocolate until evenly
coated and then place them back on the parchment-lined tray until the chocolate is firm. - Store in an airtight container in the freezer.
