Frozen Greek Yogurt Bars Recipe (Healthy!)

Description

With Greek yogurt, banana, peanut butter, and fresh strawberries covered in bittersweet chocolate, these easy bars are a delicious, healthy treat.


Ingredients

  • 1 banana
  • 1 1/2 cups plain Greek yogurt
  • 1/3 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 cup small strawberry pieces
  • 6 popsicle sticks
  • 16 ounces bittersweet chocolate bars, broken into pieces

Instructions

  1. In a medium bowl, mash the banana well. Add the yogurt, peanut butter, and vanilla and
    whisk until smooth. Fold in the strawberry pieces.
  2.  Drop the yogurt mixture into six even circles on a baking sheet lined with parchment paper.
  3. Use a rubber spatula to smooth and even out the circles. Add one popsicle stick per circle,
    making sure it’s in the middle of the yogurt and not sticking out either side.
  4. Place the tray in the freezer and freeze for 2 hours.
  5. Just before the time is up, melt your bittersweet chocolate using the microwave or a double
    broiler.
  6. Once the chocolate is melted, dip the frozen Greek yogurt bars in the chocolate until evenly
    coated and then place them back on the parchment-lined tray until the chocolate is firm.
  7. Store in an airtight container in the freezer.
