This is the second guacamole recipe I’m posting on my site.  I know what you’re probably thinking.  How many guacamole recipes does one blog need, really?  Turns out, you might need more than one recipe for guacamole.

The first recipe I shared, way back when this blog was still a baby, is still my go-to guacamole recipe if I’m ever making it for a crowd.  It’s a solid recipe.  But more often than not, I’m making guacamole for just me and my little partner in guacamole-eating crime, Luke.

It’s a lunch-time staple for Luke and me and this is the recipe I use when I’m wanting to keep it simple and whip it up quickly.  You know, while a hungry two-year-old is barreling into the pantry saying, “I hungry, Mama!”  Those days, I offer to let him help and he’s happy.

Some people might call this “guacamole verde” because there are no tomatoes.  I call it simple guacamole.  It’s heavy on the lime and cilantro, just the way I like it.  Not too chunky, but not too smooth.  No spiciness for the little ones to complain about.  Just right.

Description

This is a simple guacamole you will commit to memory after making it just once or twice.  I promise it will quickly become your go-to guacamole recipe.  It can easily be doubled or tripled to accommodate a crowd.  


Ingredients

Scale
  • 2 perfectly ripe avocados
  • the juice from 1 small lime
  • 1/8–1/4 cup finely chopped cilantro, to taste
  • 1 small clove garlic, minced
  • 1/4 cup finely chopped white onion
  • 1/4–1/2 teaspoon salt, to taste

Instructions

  1. Scoop the flesh of the avocados into a medium bowl. Use a potato masher to mash.  Fold in the rest of the ingredients. The flavors develop after the guacamole has a change to sit for a while, but more often than not I eat this right away.  Enjoy!

    I agree, you need multiple recipes for guacamole. Love experimenting….but confession: I hate cilantro…..sorry =(

    I’ll try it again though………….maybe it’ll grow on me….literally.

      It seems that people either love cilantro or totally hate it. I’m definitely in the love camp. 🙂

    love simple recipes like this!!!… sometimes when I feel really lazy I will even just do avo, lemon juice, salt and pepper and call it guac. creative i know! 😉
