Vegan Chunky Monkey Chocolate Pudding

This Vegan Chunky Monkey Chocolate Pudding is made with super creamy with avocado!

About four years ago, when I first started discovering food blogs, I found a recipe for vegan chocolate pudding using the most unusual of ingredients: avocado.  Intrigued, and excited for the possibility of having a healthier treat to serve my toddler, I gave it a try.

I’ve been hooked on the creamy, delectable dessert ever since.  I’ve made it many ways:  sweetened with everything from dates, to honey, to maple syrup.  I’ve added sweet potato to the mix.

By far, though, the recipe I’m sharing with you today is our favorite version. It takes the creamy chocolate pudding to a new level with the addition of banana and peanut butter (or any nut butter you choose).

Don’t worry about the avocado.  You don’t taste it, but it lends the super-creamy texture that makes this pudding as good as any dairy version.  Even better, this ultra-healthy dessert can be prepared in less than 5 minutes.  A mom’s dream.

Healthy is such a relative term.  This vegan pudding fits my definition of healthy without a doubt because it is more than just empty calories.  The combination of avocado, banana, and peanut butter make this full of vitamins, minerals, and healthy fats.

If you have a nut allergy or don’t like peanut butter, it’s easy to leave the nut butter (and/or the banana) out of the mix and you’ll have a plain chocolate pudding that is also incredible.

If you have a blender (or food processor) and 5 minutes, give this recipe a whirl. If your family is anything like mine, they will adore it! Here’s a video showing you just how easy it is:

Description

This avocado pudding is creamy and healthy!


Ingredients

Scale
  • 1 ripe avocado
  • 1 ripe banana
  • 1/3 cup unsweetened cocoa powder
  • 1/3 raw agave (honey or maple syrup can be substituted here, but I prefer the more neutral flavor of agave)
  • 1/4 cup peanut butter or other nut butter of choice
  • Optional Toppings: chocolate chips, peanuts, or other nuts


Instructions

  1. Put all ingredients in blender and blend until smooth. (A food processor can also be used, but I like the results in my blender better.) Chill before serving. You can serve right away, but we like this better when it’s cold. Enjoy!

  4. This is awesome. I have been making avocado puddings for awhile since I have 2 small boys. One loves chocolate. I have made pumpkin chocolate avocado pudding and banana. My son loves it in his lunch box and the teachers always ask me what is in it. I really do not see myself making traditional pudding again. I love the peanut butter or nut butter addition. Once again, another great receipe. Just made you 5 min raspberry jam – big hit!

  5. This just takes pudding to a whole new level. I love substituting fatty ingredients with avocado, its just a much more healthier fat. I would have never thought to make a pudding out of it, and adding the banana, chocolate, and nuts just sounds truly amazing!!

  6. When I first learned I had to change my diet due to my daughter’s food allergies, I had an avocado chocolate pudding recipe on my screen at work and a co-worker saw it. She looked at me with such pity that I never tried it. Although I don’t have to follow the diet anymore, I think my daughter and I will both love it.
