I’m looking out my window and all I can see is a flurry of white flakes in every direction.  So what am I bringing you today?  A smoothie, of course.

This is my way of saying, “Screw you, winter.”  Sorry.  Was that harsh?

Sometimes, I just need something light and refreshing to ward off seasonal affective disorder.  Winter can seriously give me the blues.

This smoothie features one of my favorite pairings:  lemon+blueberry.  I’ve put them together in breads, cakes, muffins, and scones, but this is my first time they’ve made an appearance in a smoothie.  What was I waiting for?

This light smoothie is just 100 calories and has no added sugar.  It tastes a bit like frozen blueberry lemonade.  I think it’s perfect in its bold tartness, but feel free to add a little sweetener if you prefer.  Just a little coconut milk adds the right amount of creaminess.

Drink it and transport yourself to a sunnier month.

Description

This light and refreshing smoothie is only 100 calories!


Ingredients

Scale
  • 1 cup frozen blueberries
  • juice from 1 small lemon (1/4 scant cup)
  • 1/3 cup coconut milk*
  • 3/4 cup cold water

Instructions

  1. Place all ingredients in a blender and blend until smooth.  Enjoy!

Notes

*For lower calorie, use the kind that comes in a carton.  The canned kind will add more calories, but will still be delicious!

    Dark, cold and snowy. Sweden’s definitely no fun during Janurary, but I’m convinced that this smoothie will cheer things up. Thanks for sharing!

    I would just LOVE to be transported to a sunnier month. Today I had to wrap my scarf around my head since my coat doesn’t have a hood and it was FREEZING outside. I looked like an old grandma and I didn’t care. Need this smoothie now!
