Eat More Plants Challenge Update: Week #3

Eat More Plants ChallengeI’m back with another update on how February’s Eat More Plants Challenge is going! This is part of the Happy Healthy Mama Healthy Year Challenge, where every month I’m focusing on a new challenge that has me focusing on my health (and sometimes my family’s health, too).

I firmly believe that by focusing on ONE THING, we can make huge changes in our lives and for our health. Even though January’s Cut the Sugar challenge is over, the habit of not eating sugar has carried over to February. While I am not as strict with eating absolutely no added sugar, overall I’m barely eating any sugar and it feels great. I’m hoping that each month new habits create a cumulative effect that makes 2016 my (and your!) healthiest year yet.

So let’s get down to it.  Last week definitely had me and my family lose some momentum with me getting sick.  Even so, this has been a good week.  Eat More Plants!As you can see, it’s much easier to get Luke to eat fruits than vegetables.  All I can do is offer a lot of vegetables.  I can’t (and don’t want to) force him to eat vegetables.  I know he’s at a tough age for eating and will come around if I’m consistent.  So I’ll just keep offering.

Meghan on the other hand caught the competitive bug this week.  Everyday she was interested in how she stacked up to my total and wanted to try to beat me.  I told her that I am bigger than her and therefore require more vegetables and fruits than her.  I really don’t want this to be a competition.  Yet, is is nice when she’s asking for vegetables for snacks instead of granola bars because she wants to have another pear to color in.

Tim is still lacking in the vegetables and fruit consumption.  I probably need to be more proactive in motivating him as coloring pears just doesn’t have the same effect on him as the kids. 😉  He did text me today and say, “I had a salad for lunch!” so I think he is starting to notice his low numbers.

Next week is going to be a big challenge as we are heading to Disney World! I think it’s going to take a big effort to keep my vegetable and fruit consumption up, but I’m going to focus on it.  I’ll let you know how it goes!
