Apple cheddar frittata

When I need a quick and easy dinner, one staple item I turn to often is eggs.  They lend fast preparation, are a good source of protein, and are chock full of nutrients.   Eggs also happen to be economical and delicious.

This is a dinner that can be on your table in under 30 minutes.  If you’re really fast and efficient in the kitchen, you can have this prepared in under 20 minutes.  How’s that for a quick and easy dinner?  It helps when you only have four ingredients:

Okay, there’s salt and pepper, too, but those don’t count as actual ingredients, do they?

A lot of fast meals tend to be bland and unforgettable.  We are forgiving of these things because they are so quick.  That is so not the case with this apple cheddar frittata.

Apples and cheese were made to go together.  It’s one of my favorite combinations.  Pair them with eggs and you have a serious winner.  Quick and easy never tasted so good.

Apple Cheddar Frittata

Makes 4 servings

1 tablespoon butter

1 apple, thinly sliced

5 eggs

2/3 cup shredded cheddar cheese, divided

salt and pepper

In a medium iron proof skillet, melt the butter over medium heat.  Cover the skillet with the sliced apples.  Cook until the apples are softened, about 3 minutes.

In a small bowl, whisk the eggs together well.  Stir in 1/3 cup of cheese.  Pour the egg mixture over the apples and sprinkle with salt and pepper.  Allow it to cook without stirring it until the edges are set and the top is starting to set, about 5-7 minutes.

Meanwhile, preheat your oven’s broiler.  Add the remaining 1/3 cup of cheese to the top of the eggs and carefully transfer the pan to the oven.  Place it about 6 inches from the broiler.  Broil until the top is set, about 2-3 minutes.  Watch it carefully so as not to burn it.  When ready, it will be starting to brown and the cheese will be bubbly.

Be careful as you remove it from the oven.  If you aren’t careful, you might catch your oven mitt on fire like I did.  Please ignore my dirty oven mitt.  Eew.

Cut into wedges and serve.  Enjoy!

Each serving has about 210 calories.  Because this is an animal-heavy dish without any veggies, I suggest pairing it with a green salad loaded with fresh vegetables like I did.

    Not even worth staying on your site. seems like you have great information so it’s really too bad your site is too covered in garbage to actually use it stay on.
    Maybe the ads are bringing you lots of money?? but how much money is it bringing in if all is mamas are like fuck that noise I’m going somewhere simple and easy to read.

    1. Hi “Mom”–appreciate the feedback. I’m always open to suggestions on how to monetize my site without ads while keeping the content free to users. Please send your ideas my way! In the meantime, it is the ads that allow me to have this blog be my job and dedicate the time it takes to develop the recipes, take the photos, run my social media accounts, etc etc etc. If I didn’t make money doing so, I’d have to get another job and wouldn’t have time to provide the content I do.   2. That looks really good, my neighbor just made a frittata that had spinach in it. It was so delicious. They are so easy to make too.
    I have burned so many oven mits and I’m glad your looks like that too. 🙂 Mine are the same way.

  4. Ooh- I love this idea! This is one that I’ll have to save for a night when I don’t want to put a ton of effort or time into making dinner. I’m a big frittata fan- but have never, ever made one with apples. 🙂
    My pot holders are all dirty. I wash them, but it doesn’t ever get them looking clean. I also always buy cheap ones, and have to replace them more than I would like to.
