Let’s be honest. We all have a vision of what marriage will be like after having children before the little munchkins actually arrive. What did you envision? Weekly date nights? Many of us think we will realistically  will be able to get dressed up and out of the house on a regular basis with our spouses as a way to keep the romance alive and reconnect on an adult level. Then we have a newborn on our hands and we quickly realize, through the fog of sleeplessness, that maybe that goal isn’t so realistic. We re-evaluate the situation and decide, hey, let’s shoot for monthly date nights. The little one starts sleeping through the night, you find your energy again, and think: maybe this can work. But motherhood doesn’t get easier just because you’re getting more sleep and you soon realize that Jr. is growing out of his clothes faster than you can buy them and babysitters cost how much and wait a minute we’re out of diapers again…

It’s okay. Staying in for date night is a perfectly acceptable way to spend the much-needed quality time with your sweetie. Let me suggest that you bypass the microwavable popcorn and all of its weird chemical ingredients and make this quick, delicious popcorn right on your own stove. Eat it in your PJ’s with your honey and rekindle that spark. The movie is optional. 😉

Start with some good quality corn kernels. Look for some that have the non-GMO label.

Now you’re ready to get poppin’.

Description

A healthy snack for movie night


Ingredients

Scale
  • 1 Tablespoon coconut oil (or oil of your choice)
  • 1/4 cup corn kernels
  • 1 Tablespoon butter, melted
  • 1 Tablespoon honey or agave nectar
  • 1/2 teaspoon sea salt

Instructions

  1. In a large pot over medium heat, heat the oil.  When it is nice and hot, add the kernels.  Put the lid on the pot and let the kernels start poppin’.  Occasionally use an oven mitt to hold the pot and shake the kernels around (with the lid still on).  Meanwhile, mix together the butter and honey.  When you hear the kernels are no longer popping close together (after about 5-10 minutes), remove from heat.  Drizzle the honey and butter mixture over the popped corn, and use a rubber spatula to mix it up and evenly coat.  Sprinkle with the salt and again mix it up to evenly coat.

    My kids love this popcorn. Added suggestion – to quickly melt the butter, after you dump the popcorn in a bowl, wait about a minute, then dump the butter and honey into the pan, (If you do it too quickly, the butter will burn), then drizzle it on.

    I love sweet & salty things, but Monsieur Fish, well, non. We pretty much ever go out anymore, even though Guppy is now 5. So expensive. But we do love movie night! woot!
