Cheese of Choice: I have used a number of different shredded cheeses here from cheddar to Colby jack to shredded parmesan cheese. You can also use Gruyere cheese – it melts like butter. Yum!

They pop right out of my silicone liners when I spray them with my avocado oil cooking spray.
Let Them Cool: The cooking doesn’t stop when you pull the pan out of the oven. So, give your egg white bites 2-3 minutes to cool before popping them out of the greased muffin tin. But don’t leave them in there for too long, as it’ll keep getting trickier to remove them if they are completely cool.

Ingredients
- 12 eggs
- 1 1/2 cups cottage cheese
- 3/4 cup shredded cheese of choice
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Preheat the over to 350 degrees. Line two muffin pans with silicone muffin liners and lightly
spray then with cooking oil. Set aside. - Place all ingredients in a blender and blend until smooth.
- Pour the blended egg mixture into the muffin cups until they are about 3/4 of the way full.
- On the bottom rack of the oven, place a shallow glass casserole dish filled 1/2 way full with
water. Place the muffin trays on the rack above the water dish and bake for 18-22 minutes, until the eggs are set and cooked through. - Allow the egg bites to cool for a few minutes and enjoy!
